Olivia’s Killer Karamel Korn a.k.a. Easy Caramel Popcorn. The easiest and very best homemade caramel popcorn recipe that I’ve ever tried.
My daughter Olivia found this recipe and we made a couple of tweaks to it. This is a great recipe to make with the kids on a snowy afternoon like yesterday when we whipped up this batch.
I’m afraid the adults ate much more than the kids though. Absolutely addictive!
TIP: The darker the brown sugar you use, the deeper the caramel flavour will be. However, any type of brown sugar will still yield an outstandingly delicious caramel popcorn.

The best caramel corn I've ever tried.
Ingredients
- ½ cup popping corn
- ¼ cup canola oil
- 2 tsp sea salt
- ½ cup butter
- ½ cup corn syrup (light or dark is fine)
- 1 cup brown sugar
- ½ tsp vanilla extract
- ½ tsp baking soda
Instructions
- Pop the corn in the oil, toss with the sea salt and set aside in a very large bowl. You can use air popped corn if you like.
- In medium saucepan combine the butter, brown sugar and corn syrup.
- Bring to a boil and simmer over medium low heat for 5 minutes.
- Remove from heat and add the vanilla extract and baking soda.
- Stir well and immediately pour over the popped corn. Toss together well to coat the popcorn on all sides.

Can plain microwaved popcorn be used as well? Also, do you use light corn syrup in this recipe? Thank you!

I gave this recipe a try and it turned out perfect. Would make again and perhaps try adding some peanuts next time. Yummy.
