As regular readers will know, my daughter Olivia is a prolific cookie baker, as is my son Noah at this point. At 12 and 13 years old now, both of them can knock out a perfect batch of Chocolate Chip Cookies without batting an eye.

In fact, the photo below of our now famous chocolate chip cookie recipe was not of a batch of cookies made by me. They were in fact, made by Noah. His just look more perfect than mine!

Of course, dear old Dad is no longer allowed in the kitchen to offer assistance at this stage. These two now only work alone!

While Noah loves his cookies, one of the enduring loves that Olivia and I share is a good peanut butter cookie, like my own Aunt Aggies Peanut Butter Cookies. Being the only two in the house who actually like peanut butter, we don’t make them that often.

The inspiration for these stuffed peanut butter cookies.

However, when she set out to make a batch the other day we took the opportunity to try this indulgent idea.  We have had the idea for a while, based upon another stuffed cookie we recently saw and baked, Oreo Stuffed Chocolate Chip Cookies.

As you can see, they turned out extremely well!

Chocolate and peanut butter together is a no brainer . While we buy very few packaged cookies in this house, generally if they are on sale, Spouse sometimes does buy Fudgee-o’s, a favorite of mine from childhood.

We were advised that the double stuffed version of cream sandwich cookies is best for making stuffed cookies, so I took that advice. They may work just as well with the regular version of the cookie and if Fudgee-o brand is not available in your area.

I’m sure your favorite chocolate cream sandwich brand will be just as good. 

So surprise your own kids with a batch. In time, like my baker kids, they might just return the favour.

Get a tall glass of cold milk and indulge the kid in you.

Fudgeeo Stuffed Peanut Butter Cookies

Fudgeeo Stuffed Peanut Butter Cookies. An ultimate chocolate and peanut butter cookie indulgence, featuring a chocolate sandwich cookie baked inside a soft, chewy peanut butter cookie.

Ingredients

  • ½ cup butter
  • ½ cup peanut butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Cream together the butter, peanut bitter, white sugar and dark sugar.
  2. Add the egg and vanilla and beat well.
  3. Sift together the flour baking soda and salt.
  4. Add to creamed mixture and fold until dough forms.
  5. Chill the dough for about an hour.
  6. Roll the dough into 1 inch balls and flatten the balls into circles just a little larger than the sandwich cookies you are using to stuff the cookies.
  7. Sandwich the Fudgeeo cookie between two of the dough circles and pinch the edges together to seal.
  8. Place the cookies two inches apart on a parchment or silicone pad lined baking sheet. Chill these prepared cookies in the fridge for another 20-30 minutes. This kelps keep them from spreading too much.
  9. Preheat oven to 350 degrees F  and bake for about 15 minutes until golden brown at the edges at 350 degrees F. Do not over bake or cookies will be brittle.

Notes

These are quite large cookies which makes them ideal for sharing. The calorie count does account for the cookie at the centre as well.

Hi Barry, I made the chewy Oreo stuffed cookies last Christmas and wanted to do the fugdeo version this year. I notice this recipe does not include the instructions to freeze and bake as needed. Can I also do this with the fudgeo version?
