Spicy Barbecue Pork Chop Tacos with Chunky Avocado Salsa. A kid favourite and a terrific use for leftover grilled pork chops or a good reason to grill some.
Last night I planned to make simple grilled pork chops using my Maple Chipotle Barbecue Sauce but number one son, Noah, had a yen for tacos so pork chop tacos were born!
See? No problem, we just combined the two into a very delicious dinner; compromise is what brings family harmony after all.
As the expression goes here in Newfoundland, we all went “face and eyes into it”! We had both hard and soft shell tacos on hand and they were both fantastic.
We added some simple homemade chunky avocado salsa to the tacos too which made them even better. I’m always up for a quick, easy dinner idea and this was a particularly good one that I know we will be making again soon.
If using leftover chops for these pork chop tacos, wrap them tightly in aluminum foil and reheat in a 350 degree F for about 10 minutes before thinly slicing.

- 6-8 center loin pork chops
- salt and pepper to season
- 1 cup homemade or good quality Spicy BBQ Sauce
- Hard or soft taco shells
- 2 small tomatoes
- 1 small red pepper
- 1 avocado
- 1/2 small red onion finely diced
- 1 clove minced garlic
- finely grated zest of one lime
- juice of one lime
- 1 tbsp chipotle powder
- 1/2 finely minced jalapeño pepper
- 1/4 cup chopped fresh cilantro
- season with salt and pepper

Season the pork chops with salt and pepper and grill them until completely cooked to 160 degrees F at the center on a meat thermometer.

In the last minutes of grilling brush on a good spicy barbeque sauce or make your own from the recipe at this link: Maple Chipotle BBQ Sauce

Coarsely dice the tomatoes, red pepper, and avocado.

Toss together with the remaining ingredients. Cover and let stand in the refrigerator until ready to serve. Makes about 2 1/2 cups salsa.

Thinly slice the pork chops and serve on warmed taco shells along with the salsa.

Lovely tacos! I can't wait to try pork tacos soon (we usually have chicken). I love combination of flavours and the vibrant colours!
