This easy dijon and maple dressing will wake up your salad blahs. Sometimes the simplest salads are the best. That is exactly what this seemingly plain salad offers. The quality ingredients in this delicious salad just speak for themselves and are complimented by each other in a great combination of taste and texture.

It works wonderfully as an appetizer course because it is light and flavourful, uses just basic ingredients. The whole thing is then brought together by an easy homemade maple dijon dressing.

While this makes an excellent first course for any dinner party or romantic dinner, if you added some plain grilled chicken or shrimp, it would also make a very tasty complete meal.

Ingredients
For the Salad
  • Baby spinach
  • sliced red onion
  • toasted walnuts
  • dried cranberries
For the Maple Dijon Dressing
  • 1/2 cup olive oil
  • juice of one small lemon or 1/2 large lemon
  • 2 tbsp dijon mustard
  • 4 tbsp maple syrup
  • pinch salt and pepper
Instructions
  1. Shake all the ingredients together in a mason jar or pulse it a few times in a blender before serving on your salad.
