This very quick and easy creamy garlic shrimp pasta dish is one I often use for a quick lunch. I also use it as a go-to recipe for last minute dinner guests.

Because it takes only about 20 minutes to prepare, I always seem to have frozen shrimp on hand. Unexpected guests are never an issue when you have plenty of recipes like this.

It's a good reason to have things like frozen shrimp or scallops in your freezer. They thaw quickly and cook quickly too.

It's a secret weapon for meals in minutes.

A very versatile recipe that need not be spicy if you don't want.

If you are not a fan of spicy food, you can easily omit the chili paste. Substitute a tablespoon or so of dijon mustard to the sauce instead for an equally good dish without the kick.

Who doesn't need such a versatile dish in their recipe arsenal?

Pre-cooked shrimp can also be used in this recipe.. Just add them to the sauce at the end., only long enough to reheat them.

Spicy Creamy Garlic Shrimp Pasta

Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

A very quick and easy weekday meal that you can have on the table in about 20 minutes. Ideal for last minute dinner guests.

Ingredients

  • 1 pound large shrimp, peeled and de-veined
  • 3 cloves minced garlic
  • 3 tablespoon olive oil
  • Salt and pepper to season
  • ½ cup small diced red pepper, or roasted red pepper
  • ¼ cup white wine (seafood, vegetable or chicken stock can be substituted)
  • 3 teaspoon crushed chilli paste, (optional or to taste; 1 teaspoon chili flakes can also be substituted)
  • 3 tablespoon chopped fresh basil or Italian parsley
  • 1 ½ cups whipping cream

Instructions

  1. Lightly sauté the garlic in the olive oil over medium heat.
  2. Add the shrimp, season with salt and pepper and sauté for only about 3 minutes.
  3. Remove the shrimp from the pan and add the white wine.
  4. Reduce the white wine to about half before adding the chilli paste, red pepper and cream.
  5. Simmer the sauce for a couple of minutes until the cream begins to thicken slightly.
  6. Add the shrimp back to the pan along with the chopped herbs and simmer only for an additional minute or so before serving over your favorite pasta, couscous or rice.
