Apple Crumble Bread Pudding. 2 comfort food desserts in one!

Today’s recipe is one that has not appeared online before. However, it was published as one of the new dessert selections in my first cookbook. With my 5th book coming out soon, and fall weather just around the corner, I thought I’d release this one into the wilds of the internet, for you all to enjoy as well.

I like Red Delicious Apples for this recipe but you can use any kind you like.

This is a dessert recipe that I would consider a terrific marriage of flavors and textures, especially at my house. Regular followers of Rock Recipes blog know how much Spouse loves her bread puddings and how much I love a fruit crumble of almost any sort.

When developing new recipes for ny first cookbook, I decided to combine both those ideas into one ultimate Parsons family dessert.

Just to add a little extra over-the-top element, and to compliment the apples in the crumble, I added a generous drizzle of our Homemade Caramel Sauce.

The result was as luscious as it was indulgent. This one will definitely be reserved for special occasions.

Apple Crumble Bread Pudding

Cook Time: 40 minutes
Additional Time: 30 minutes

Apple Crumble Bread Pudding. An incredibly delicious marriage of textures and flavours made from combining two favourite comfort food desserts.

Ingredients

  • 3 large firm apples, peeled and sliced into wedges
  • 3 tbsp butter
  • pinch salt
  • 3 tbsp brown sugar
  • ¼ tsp cinnamon

For the Bread Pudding

  • 3 cups bread cubes (Use any good quality bread. I’ve used Brioche here but French,Italian or Belgian bread is good too)
  • 1/4 tsp freshly grated nutmeg
  • 1/2 tsp cinnamon
  • ½ cup whipping cream
  • ½ cup milk
  • 1 egg
  • 1 egg yolk
  • 1/3 cup sugar
  • 1 ½ tsp vanilla extract
  • Pinch salt

For the Oatmeal Crumble Topping

  • 1 tsp baking powder
  • 2/3 cups rolled oats (large)
  • 2/3 cups flour
  • 1/3 cup brown sugar
  • ½ cup butter, cut in small cubes

Instructions

  1. Begin by sautéing the apple wedges, butter, brown sugar, salt, and cinnamon together in a medium non-stick pan.
  2. Sauté for only a couple of minutes; you want the butter and sugar to caramelize together, but you don’t want the apples to become too soft.
  3. Set aside to cool.

To prepare the Bread Pudding layer

  1. Grease a 9” x 9” baking dish well. A slightly larger baking dish will work too.
  2. Toss the bread cubes with the grated nutmeg and cinnamon, and then place the spiced bread cubes into the greased baking dish.
  3. Whisk together the whipping cream, milk, 1 egg and 1 egg yolk, sugar, vanilla extract, and a pinch of salt.
  4. Pour the mixture evenly over the bread cubes, pressing down slightly to make sure all the cubes are soaked. Leave them to soak while you make the crumble.

To prepare the Oatmeal Crumble Topping

Preheat the oven to 350°F. In a large bowl, toss the baking powder, rolled oats, flour, and brown sugar together.

Using your hands, rub the small cubes of butter thoroughly through the dry ingredients.

When the butter is fully incorporated into the dry ingredients, layer the apples evenly over the bread pudding layer.

Drizzle any of the caramel from sautéing the apples over the bread pudding as well.

Press the crumble together in handfuls and then crumble it over the apples by breaking off small pieces about the size of the top of your little finger.

Baking

  1. Bake in the preheated oven for about 35 to 40 minutes or until the top is evenly golden brown and the custard beneath is set. A clean butter knife inserted into the center of the pan will determine if the custard beneath is still liquid.
  2. Remove from the oven and cool on a wire rack for 20 to 30 minutes before serving with a generous drizzle of Homemade Caramel Sauce

I love bread and apple crisp they are 2 of my favourites. I can’t wait to try these in one dessert sounds absolutely delightful!! And of course there will be homemade Carmel sauce with it!!
