These soft, almost cake-like cookies make a very welcome afternoon treat with a steaming cup of tea or tall glass of cold milk.
They can easily be prepared in a few minutes and if you like. You can keep the wrapped dough in the fridge for 2 or 3 days so that you can bake them off fresh a few at a time.

Lemon Snow Cookies
These lemon snow cookies are easy to make, tender, almost cake-like morsels that go beautifully with an afternoon cup of tea.
Ingredients
- 1 1/4 cups flour
- 1 tsp baking powder
- 1/2 cup butter
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 large egg
- finely minced zest of 1/2 lemon, more if you like
Instructions
- Sift together the flour and baking powder and set aside.
- Cream together the butter and sugar well.
- Beat in the vanilla extract and egg.
- Stir in the finely minced lemon zest.
- Fold in the flour mixture until a soft dough forms. Do not overwork the dough. Wrap the dough in plastic wrap and chill in the fridge for about a 1/2 hour.
- Roll dough into about 1 inch balls and place them 2 inches apart on a parchment lined cookie sheet. Press them down with two fingers. Bake at 325 degrees F for 12 minutes or until they just start to turn golden brown at the bottom edges.
- While still hot dust with powdered sugar. Transfer to a wire rack to cool completely.
