This chocolate chip cookie squares recipe is one of my mom’s recipes from many years back. She makes them with a chocolate frosting but I like to melt extra chocolate chips over the top. My kids love these.
It is a very fast and easy recipe too. I’ve made these without the coconut and even sometimes added toffee chips as well. These also freeze beautifully.
I like dark chocolate chips in these cookie bars but you can use any kind you like.

The Easiest Chocolate Chip Squares
A 40+ year old family recipe. It takes only a few minutes to prepare these soft, chewy cookie squares perfect for lunchboxes and after school snacks. An ideal recipe for cookie swaps too.
Ingredients
- 1 cup butter
- 1 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/4 tsp baking powder
- 2 1/4 cups flour
- 3/4 cup fine unsweetened coconut, (optional)
- 3/4 cup + 3/4 cup chocolate chips, for top
Instructions
- Cream butter sugar and vanilla until light and fluffy
- Add the eggs, one at a time and beat well.
- Sift together the flour, baking powder, (and coconut if you are using it)
- Add dry ingredients to the creamed mixture, folding to combine well.
- Fold 3/4 cup chocolate chips.
- Spread in a greased 9 inch square baking pan and bake for 40 minutes at 350 degrees F. (325 for glass bake ware)
- Remove from oven and while still hot, sprinkle evenly over the top with 3/4 cup chocolate chips. Let stand for 5 minutes, then spread the melted chips evenly over the surface with the back of a spoon or an offset spatula.
- Cool thoroughly before cutting into squares or bars.
Notes
Note: the amount of leavening agents has been reduced from the original measurements first published in this recipe years ago. That's based upon reports of the cookies falling in the centre when baked. I have omitted the baking soda completely and reduced the baking powder by 1/4 tsp. This has worked very well in my experiments with this recipe and with those who tested it for me..
These freeze exceptionally well in sealed plastic containers.

How on earth did you get 25 squares from a 9inch pan? Though these are lovely I only got 16 and that was cutting them small, I also chilled before cutting to get a cleaner cut.

These are an awesome cookie! For some extra yumminess I swirled some peanut butter through the chocolate layer! These are also very quick to make!
