I love a truly great hamburger. The evidence is there in our collection of BEST BURGERS on this website. We’ve done them all from pork to chicken and of course beef burgers.
As far as beef burgers go, though, I am a stickler on many points. For many years, I have ground my own beef for burger patties.
I do this because first of all the quality is far far superior to anything I find in supermarkets.
You don’t need to do this to make these square burgers. Store bought ground beef will work as well.If possible, ask your butcher for a coarse grind. That will help with the texture of the burger as well. Nobody likes a mushy burger patty!

When your grind your own meat, I personally consider it to be more food safe.
Store bought ground beef comes from many parts of the same animal, so automatically that’s inferior quality.
Store bought ground beef also can some from many animals. This makes cross contamination more likely in a facility that may process thousands of animals a day.
Fresher, tastier, better quality and knowing the single source of the meat used, are all big parts of why I choose to grind my own.

How to make Square Burgers….and never go back.
This is the method our family has used for many years.
It has become a summer ritual at our place. We make about 3 dozen burgers at a time. This allows us to stack them in the freezer for less storage space and easy access
The real beauty of this idea, particularly in summer, is that you cab grab as many or as few as you need at a time. That’s a real lifesaver for last minute guests, or just when having a quick delicious meal on your own.
Once you start, you may never be without Square Burgers in your freezer.

- Meat grinder (or use lean store bought ground beef.)

Start with the ground beef.
As Martha, would say, get the best quality you can afford.
How to Make Square Burgers, includes these tips for grinding your own beef
- Choose a cut of beef with a decent amount of fat. Boneless chuck (blade) roast is my preferred cut, just choose one with plenty of marbling/fat. 20% fat content is ideal.
- If you can only get very lean meat, supplement it with any beef trimmings you may have. In the photos and videos shown, I have used a lean cross rib roast but added some brisket fat from my trimmings earlier in the week. I weighed the lean meat and the fat separately to ensure the proper 20% fat to lean ratio.
- Use very cold meat (and fat trimmings if you have them? Cut everything in smallish cubes. If it is very warm in the kitchen, lay the meat cubes in a single layer on a cookie sheet in the freezer for a half hour or so.
- Once everything is ground "knead" the meat mixture, as you would bread dough, to ensure the fat and meat are evenly distributed.
- Now you are ready to weigh and form the patties into shape.
Forming the burgers.
- Weigh out 5 ounce portions of the ground beef.
- Form into a tight ball in your hands, and set aside on a cookie sheet until all the burgers have been formed onto balls.
- Place a square of plastic wrap flat on the counter top. Place a ball of the ground beef in the centre.
- Press down firmly with the palm of your hand to form a rough circle.
- Fold each edge of the plastic very gently, until a square of plastic envelopes the patty.
- Flip the burger patty over and gently press the meat into the corners of the formed plastic wrap square.
- Give it a couple of taps with your palm again to ensure even thickness of the patties throughout.
- Stack the burgers and freeze them in Ziploc bags. A great way to have as many burgers as you like at your fingertips.

Wonderful idea, pieces of meat can be bought at a lower price on sale and processed and taste so much better when one cares about flavor and texture this way. Better than just cheap burger and I love the idea of square burgers. Thank you!

Estimated cost $2? For the plastic wrap and Ziplock storage bag, perhaps - but it certainly doesn't take in to account the most important thing...the cost of the MEAT! Great idea/method for shaping the patties though. Thanks!
