Irish Potato Cakes (Boxty)

This Irish staple dates back to the 1700’s and is a combination mashed and shredded potato fried into the most incredible potato cake you have ever had.

It’s the combination of the two textures that makes these unique. Making the most out of a humble potato is exactly what this is. The perfect vessel to become a carrier for all things delicious.

Picture caviar. Sautéed mushrooms, bacon and cheddar, you name it, its going to go great with these golden fried cakes.

I love using them with good quality smoked salmon and a sour cream elevated with fresh herbs and lemon juice to make the flavours pop.

Irish Potato Cakes (Boxty) with Smoked Salmon and Herb Sour Cream. An Irish traditional favourite that you can dress up any way you like!

Ingredients

For the Boxty:

  • 3 russet potatoes, peeled, boiled and mashed
  • 3 russet potatoes, peeled, grated, squeezed dry
  • Salt and black pepper
  • 1 cup all purpose flour
  • 1/2 c buttermilk or milk
  • 2 tbsp butter for frying
  • 8 slices of smoked salmon for topping

For the herb sour cream:

  • 1 c sour cream
  • 1/2 lemon, juiced
  • Salt and black pepper
  • 1 tbsp chives, sliced
  • 1 tbsp dill, finely chopped

Instructions

To prepare the Boxty

Mix all ingredients and fry in a cast heavy bottom pan over medium heat with melted butter until golden brown on each side.

About 10 minutes per side.

Serve hot and top with smoked salmon  

To prepare the sour cream

Mix all ingredients and top each cake with a dollop before serving.
