Even if you are not a baker, I'll bet you will have no trouble putting together this easy and pretty quick to prepare Pina Colada Upside Down Cake.
The fresh pineapple makes all the difference in a simple recipe like this, although you can use canned in a pinch.

I buy a fresh golden pineapple and keep it for several days until it is at the peak of its ripeness for the most intense pineapple flavor. The cake recipe itself is a very simple one-bowl recipe that anyone can easily prepare.

I could use a little more rum in this dish. 🙂 It looks amazing.
The Pina Colada cake looks luscious along with a lot of other things on your blog. I will follow your blog. Best to you and your family!
I made this on the weekend when I had company over for supper....fantastic!! I replaced the oil with an equal amount of applesauce, still turned out great. I will definitely make it again.
Wow what a GREAT idea! I'll bet the addition of coconut and rum really kicks up the flavor
I’m confused with the steps. Should I do 1,4,2,3,5,6,7? That makes sense to me.
Steps have been updated for clarity.
I can't find where the recipe says what size of pan to use. Is it a 9 by 9 square?
Oops. Updated now.
