Anyone who has been following this blog for very long knows that I have a thing for scallops. 

We get plenty of great seafood here in Newfoundland from our much loved cod to salmon, crab, lobster, shrimp, halibut and much more. However my very favourite for a very long time have always been scallops.

To experience scallops, just plucked from the ocean floor, is an experience every seafood lover should have. You can taste the salt of the sea as well as the sweet rich flavour of the scallops.

One thing that is true of fresh scallops, is that they should be very simply prepared to enjoy that fresh ocean flavour at its very best.

One of my favourite ways to prepare them is lightly breaded and then quickly fried. I have eaten them like this before they are barely out of the ocean for an hour and there is nothing better.

Quick cook, not overcook!

Quick cooking is key, because it is very easy to overcook them...and an overcooked scallop is a true culinary crime.

What should be a soft, succulent morsel can be turned into a rubbery nugget if you are not careful. That's why I also often take to simply marinating them and grilling them on a hot grill. High heat for a short time is the best way to cook scallops perfectly.

In this simple recipe I quickly marinated them in  lemon juice, zest and pepper. A short marinating time is all that is needed here.

Longer and the acid from the lemon juice will begin to draw moisture from the scallops. I like the lemon zest included because it gets a little char on the grill adding even more of a smoky element to the scallops.

I then whipped up a quick Lemon Basil Mayo and served them on lightly toasted D’Italiano® Brizzolio Hamburger Buns for one of the best sandwiches of the season. Utterly delicious!

Grilled Scallops with Lemon Basil Mayo on D'Italiano Brizzolio Hamburger Buns

Grilled Scallops with Lemon Basil Mayo on D'Italiano Brizzolio Hamburger Buns - these succulent sandwiches are a super fast, seafood treat for a casual summer dinner. Served with delicious, complimentary, flavour-infused mayo.

Ingredients

  • 4 D'Italiano Brizzolio Hamburger Buns
  • Fresh Lettuce leaves
  • 2 dozen large fresh scallops
  • juice of 1 small lemon
  • zest of i small lemon
  • salt and pepper to season

For the Lemon Basil Mayo

  • ½ cup plain mayo
  • 1 teaspoon lemon zest, fine minced
  • 1 teaspoon chopped fresh basil

Instructions

  1. Marinate the scallops in the lemon juice & lemon zest for only about 10 minutes.

  2. Drain the juice off the scallops and season with salt and pepper.

  3. Lightly oil the grill and cook on high for only a couple of minutes per side.

  4. To prepare the mayo, simply mix the ingredients together until well blended.

  5. Serve the scallops on lightly toasted D'Italiano Brizzolio Hamburger Buns with lettuce and the Lemon Basil Mayo.
