We are definitely on a mission around here! That mission? To make sure no over ripe, brown speckled bananas ever get thrown in your trash.
And we are very committed to that mission! From Banoffee Pie to Banana Bread Cookies, we have added a LOT of banana recipes over the past 11 years. In fact a quick search of the site shows a total of 33 recipes that use bananas.

For sure there will be more in the future. Why do we always over buy bananas anyway?

These bananas are only a few days apart. We have plenty of great recipes for ripe bananas.
Oh well, with great treats like this one to use them up, that just may be a blessing in disguise.
These great little lunchbox treats are just as easily made as muffins if you do not have the mini loaf pans. I love the exotic flavour of cardamom but if you are not a fan, just substitute cinnamon or allspice for an equally delicious alternative.

Did you try it? You should be able to sub applesauce for at least half the fat in any baked recipe

Oh oh, The recipe says preheat oven to 350F, then it says bake at 325F for 20 - 30 etc. I was doing them in muffin pans so I went with the higher temp and just watched them. You might want to edit?
