Haystack Cookies. An updated quicker and easier version of this old fashioned recipe, using sweetened condensed milk to prepare this simple type of macaroon.

Haystack Cookies are a very quick and easy version of a macaroons recipe using just a few simple ingredients.
I always get requests for this recipe during the Holiday season because they are a real old fashioned Newfoundland favourite during Christmas time.
It seemed every baker I knew while growing up made these every year.

I've modified the original recipe to include sweetened condensed milk which not only makes the recipe easier, it keeps the centres more moist too.
A nicely packaged batch of these would make a lovely gift for the coconut lover in your life too.

This recipe sounds really good! I just picked up a can of the new Eagle Brand chocolate sweetened condensed milk, I think I'll try them using that!
Where does the cream of tartar come in?
Cream of tarter gets whipped with the egg whites. Thanks for catching that.
Great cookie but how the heck do you get them off the parchment paper????
I have seriously never had them stick to parchment paper. Actually, I've never had anything stick to parchment paper. What brand was that?
These look rather tall.Were they baked in a muffin pan? I ask because the sides seem lighter than the top as if they were in something and not on it. Also a cookie scoop would make them a different shape (more rounded) and smaller than the picture shows.If it was a scoop what kind was it? I'd love to make them but would be disappointed if they turned out different than that tasty looking picture shows!
Just as the recipe says, I used an egg cup...just like my Nan did. The one I used is a really nice depth and shape for these but a small cookie dough scoop would also work well.
If I wanted to make these different colors what would I use ..like pink chocolate so on thanks
Pink chocolate? I've never heard of that.
I think i'll put an almond on top and then drizzle with chocolate! Yummmmy
When I make these cookies a small amount of cooking spray on the parchment paper will make it easier to remove the cookies.
I haven't found that to be necessary.
