During a recent girls trip to Edmonton, I visited a lovely Italian market which had the most amazing fresh produce, cheese and olives.
I gathered my ingredients and whipped up this salad for my sis in law and nephews.
I decided that a family barbecue would be a great time to try it at home. and I could show off the only basil plant I’ve ever successfully grown to my lovely niece Stacy – gardener extraordinaire!

Caprese Inspired Pasta Salad
Caprese Inspired Pasta Salad. A new favourite summer salad that's bright, and boldly flavoured with an easy Parmesan Herb Dressing.
Ingredients
For the salad
- 2 cups of bow tie pasta
- 2 and 1/2 cups of chopped tomatoes
- 1 1/2 cups chopped bocconcini or fresh mozzarella
- 1 cup chopped olives, I used green and kalamata
- Bunch of chopped basil, (about 1/4 cup chopped)
For the Dressing
- 1/3 cup olive oil
- 2 tbsp white wine vinegar
- Juice and zest of 1 large lemon
- 2 tbsp honey
- 1 tbsp chopped capers
- 2 tbsp Dijon mustard
- 1/2 cup grated Parmesan
- Bunch of fresh herbs ( I used thyme, oregano and basil) (About 1/4 chopped herbs)
- Salt and pepper to taste
Instructions
To prepare the salad
- Cook the 2 cups of pasta in salted water until al dente,.
- Rinse pasta in cold water.
- Add the tomatoes, cheese, basil and olives.
- Toss all of the ingredients together and toss thoroughly in the dressing just before serving.
To prepare the dressing
- Combine all ingredients in a blender or food processor until well combined and smooth.
