Garlic Herb Butter. A versatile recipe, with many uses, that keeps the garlic sweet and mellow in flavour, while complimenting fresh herbs beautifully.

Garlic Herb Butter.

For many years, I have grown herbs in pots and in a small garden bed outside my kitchen. I never like to be without fresh herbs.

This past winter I even grew some in a new indoor hydroponics kit in my office, which is just off the main kitchen/family room area. I grew, oregano, thyme and the Mammoth variety of basil, which was very successful.

Those leaves are almost as big as lettuce leaves!

Garlic Herb Butter is a very simple recipe, yes but very versatile too. It just has to be done right so as not to be overpowering or bitter in flavour.

For some folks, the only thing that comes to mind when thinking of garlic butter is cheesy garlic bread, served with some amazing pasta dishes.

I have no objection to that at all.  Let's face it, who doesn't love great garlic bread!?

I also like to use it in other ways, which is why I've shown it here formed into logs in addition to a soft spreadable consistency.

Compound butters are an utterly delicious addition to so many things. And there are so many flavourful additions you can make to them from toasted nuts and seeds to smoked paprika or chillies! The possibilities are endless.

My favourite way to use them is over grilled meats, fish or vegetables. Grilled asparagus is, in particular a household favourite.

In winter, when we mostly roast our root veggies, this gets melted on top when serving as well. 

Everyone knows I love a great steak dinner and a dab of this butter melting over a perfectly grilled rib eye or striploin steak is utter perfection in my eyes.

So give my method a whirl, and if you've only ever used it for garlic bread, give it a delicious addition to any of the ideas suggested here.

Ingredients

  • 1 cup plus 3 tablespoon room temperature salted butter
  • 6-12 cloves chopped garlic (Depends on how garlicky you like it)
  • ¼ cup chopped fresh herbs (any combination. Basil, thyme & oregano are used here)
  • 1 teaspoon coarsely ground black pepper (or less to taste)

Instructions

    1. NOTE: If you "skipped to recipe" you will find descriptive photos of the Garlic Herb Butter making and forming processes on the page above, for visual reference.
    2. Over low heat, melt the 3 tablespoon butter in a small saucepan along with the chopped garlic.
    3. Cook for only a couple of minutes until the garlic is just softened, not browned. This keeps the garlic more mellow and sweet. Overcooked garlic can be bitter.
    4. Transfer the hot garlic butter to a small bowl, to get it to cool down quicker. Place the bowl in the freezer for 10 minutes while you prepare the rest of the ingredients.
    5. Add the 1 cup room temperature to a small bowl.
    6. Chop the herbs quitely fine and add to the butter along with the coarsely ground black pepper.
    7. Use a fork to mash all of the ingredients together until well combined and relatively smooth.
    8. Finally add the cooled garlic butter. It should still be in liquid form or just starting to firm. 
    9. Continue to mash and whip the garlic butter through the herbed butter until the mixture is consistently smooth throughout.
    10. The mixture will make 2 small logs to serve on grilled meats, or you can store it in an airtight container to use later.
    11. To form a log, place a piece of plastic wrap flat on the counter top. 
    12. Add half of the butter just, about six inches from one end evenly at the centre of the roll. (SEE PHOTOS ABOVE)
    13. Take the end of the plastic wrap and carefully drape it over the butter log. Roll the log in the the remaining length of plastic wrap and twist the ends closed firmly.
    14. Tuck the twisted ends underneath and place the logs on a flat plate to firm up for about an hour or so before using. 
    15. If you make the butter a day ahead, the flavours will infuse even more deeply. 
    16. The butter should keep for up to a couple of weeks in the fridge.
    17. Use to make garlic bread, or to serve, melting over any grilled meats or fish. It's also delicious melting over grilled or roasted vegetables. I also like it used in the pan to make a cheese omelet.
