Apricot Hazelnut Stuffing

A couple of recipes today by special request from a reader who wanted a couple of new side dish recipes to add something different to their Sunday Roast Dinner. These two recipes have proven popular with folks who have tried them over the years. The Honey Mint Roasted Carrots recipe has been previously posted.

3 Tbsp extra virgin olive oil
3 cloves chopped garlic
6 cups crusty French or Italian bread cut in small cubes
3 tbsp dry marjoram
1 tsp ground cinnamon
1 tsp nutmeg
½ tsp ground black pepper
Salt to season
½ cup toasted roughly chopped hazelnuts
¾ cup chopped dried apricots
¼ cup melted butter
1 cup chicken stock

Sauté garlic in olive oil and add to remaining ingredients. Toss together well and use as a stuffing for chicken or a loin roast of pork.

You can also cook it in a covered casserole at 300 degrees F for about ½ hour.
