This Chocolate Truffle Cream Cake was never intended to be a recipe for this blog. Nor was it intended to be posted as a gluten free recipe.

It can easily be made with regular all purpose flour instead, and not be a gluten free recipe. It was actually a last minute birthday cake for our niece’s husband, Richard.

Our niece, Terrie, has had to eat gluten-free for the past couple of years. So whenever she joins us for dinner, I try my hand at a gluten free dessert.

I’d always wanted to see how our standard one bowl chocolate cake recipe would fare with an all purpose gluten free flour and this was a good opportunity.

When I say it was never intended to be a recipe for the blog, that was actually true. But I had taken the photo in order to demonstrate the benefit of dusting cake pans with cocoa instead of flour when making chocolate cake.

Use the best quality cocoa powder you can find for this recipe.

Especially of the sides were to be left “naked” as in this case. It really does improve the appearance and maintain the deep chocolate colour.

When I posted the pic on our Facebook Page, I immediately began to get messages to post the entire recipe. Also to post the process of putting the cake together, including the chocolate dipped strawberries.

Even though all of the elements of this cake can be found in other recipes on this blog, I decided that idea had some merit, so here it is.

Chocolate Truffle Cream Cake. Making it gluten free.

No two commercial blends of all purpose gluten free flour are the same. While this cake did pretty well with the flour I used, some flours do produce a more crumbly texture.

If that happens, the cake will still be quite good but in the future  you might want to tweak the oil to milk ratio. If it does come out a little crumbly, next time increase the oil to 2/3 cup and decrease the milk by 3 tbsp to see if you get a better result.

The chocolate truffle cream uses naturally gluten-free ingredients anyway. So its the perfect addition to this cake if you choose to make it gluten free or not.

The addition of chocolate dipped strawberries to any cake turns the ordinary into a showstopper every time. My advice is to double the amount of chocolate dipped strawberries and serve extras at the table. everyone always wants a second one.

Chocolate Truffle Cream Cake - with a gluten free option. This one bowl chocolate cake recipe works well with any all purpose gluten free flour. The chocolate truffle cream frosting is naturally gluten free.

Ingredients

For the chocolate cake

  • 2 cups sugar
  • 2 cups all purpose flour
  • ¾ cup cocoa
  • 2 tsp . baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 cup soured milk, add 1 tbsp vinegar or lemon juice to milk
  • 1 cup black coffee
  • ½ cup vegetable oil
  • 1 tsp vanilla extract

For the chocolate truffle cream

  • 1 cup chocolate chips
  • 1 cup whipping cream
  • 2 tbsp icing sugar, powdered sugar

For the Chocolate Dipped Strawberries

  • pound About 1 ripe red strawberries
  • 1 cup dark chocolate chips
  • 1/4 cup whipping cream

Instructions

To make the cake batter

  1. Combine all ingredients in a mixing bowl and beat with electric mixer for 2 minutes.
  2. Pour into 2 greased and floured 8 or 9 inch cake pans.
  3. Bake at 350 degrees F for 30-35 minutes or until toothpick inserted in the center comes out clean. Cool in pans for 5 minutes before turning out onto a wire rack to cool completely.

To prepare the chocolate truffle cream

  1. In a double boiler, melt the chocolate chips together with ¼ cup of the whipping cream. Stir constantly as you melt the chocolate and don't let it overheat. As soon as the last of the chocolate melts, take it immediately off the heat and let it cool down to lukewarm or cooler.
  2. Whip the remaining ¾ cups cream with the icing sugar & vanilla to soft peaks and fold in the melted chocolate by hand.
  3. Spread each of the two cooled cake layers evenly with the chocolate truffle cream and refrigerate for an hour or so to let the truffle set before stacking the cakes on a serving plate. Garnish with chocolate dipped strawberries if you like.

To make the Chocolate Dipped Strawberries

  1. Wash the strawberries and pat dry them thoroughly with paper towels.
  2. Heat the whipping cream in the microwave until it is hot but not boiling.
  3. Melt together the chocolate chips and heated whipping cream together over low heat in a small saucepan. Do not overheat this mixture. Stir it constantly and take it just to the point where the chocolate chips melt and the mixture is smooth. Transfer the chocolate mixture to a 1 cup measure for easier dipping.
  4. Line a cookie sheet or cutting board with parchment paper or wax paper.
  5. Gather the green leaves at the top of the strawberry and hold between your thumb and 2 fingers ad you dip each strawberry into the chocolate.
  6. Lay the berries on the parchment paper lined cookie sheet to cool to room temperature. Any leftover chocolate can be drizzled on the cake if you like, before adding the dipped strawberries to finish.

Years ago I worked in an upscale restaurant .It was a totally "new" dinning concept for the area.The owners had cakes called Tortes brought in every other day from Kansas City , The picture of your cake and the name brought beautiful memories rushing back. Layers of cake between a lush frosting and even layers of a fruit spread. These were Pastry at it's finest. I've never seen anything like them since. Have you tried making anything like this? If so would you share the recipe? I know these are a lot more work than an ordinary layer cake, but having seen your baking skills and expertise I know you can make these. Barb

Hi,

Just about to make this tonight. When you say 1 cup black coffee? is it a cup of instant coffee powder? or is it a cup of liquid coffee? Sorry, i know it sounds like a really stupid question.

Also, if we replace the chocolate in the truffle cream with nutella, would it still be nice?
