Fettuccine with Roasted Tomatoes

Serves 4
One 350 gram package of fresh pasta
6 large tomatoes cut in cubes
3 cloves minced garlic
3 tablespoon fresh oregano, finely chopped
1 small red onion chopped
Salt and pepper to season
6 tablespoon olive oil
Place tomatoes, garlic, onions, salt, pepper and olive oil in a glass baking dish. Toss well and bake at 400 degrees for about 25 minutes. The edges of the tomatoes should just be beginning to brown. Remove from oven and toss well with the cooked pasta, oregano and a little additional olive oil if desired. Top with grated Parmesan and serve.
