These tasty salmon paper parcels are simply steamed with vegetables and seasoning ingredients inside parchment paper. They are a delicious, healthy option for either a family supper or a fancy dinner party.

As a dinner party entree, they are ideal because they can be prepared in advance and then popped into a hot oven when guests arrive.Lime, ginger, cumin and sesame oil add extra flavour to the delicate salmon and the red and yellow peppers add a little healthy sweetness as well. We serves the salmon with some simple rice noodles but a side salad is also a good choice to accompany this tasty dish.

Ingredients
  • 4 ounce six salmon portions about an inch thick
For the vegetable mixture toss together:
  • 1 small red pepper julienned
  • 1 small yellow pepper julienned
  • 2 cloves minced garlic
  • 2 tbsp finely grated fresh ginger
  • ½ tsp toasted sesame oil
  • juice of one lime
  • finely grated zest of ½ lime
  • 2 tbsp light soy sauce
  • ½ tsp white pepper
  • ½ tsp ground cumin
  • 3 tbsp fresh chopped chives
Instructions
  1. Place each of the salmon portions on a square of parchment paper. Top with the vegetable mixture. 
  2. Bring two sides of the paper together and roll the paper together to about an inch above the peppers and salmon. Roll up the two open ends of the paper and tuck underneath the salmon.
  3. Place the salmon parcels an inch or two apart on a baking sheet and bake at 375 degrees F for about 20 minutes depending upon the thickness of the salmon. Let rest for 5 minutes before serving.
