It’s the weekend which means a great brunch is probably on the cards at our house including this apple French Toast.
This one is a personal favourite of mine. The apples are glazed with an apple juice and demerara sugar reduction reduction which intensifies the great apple flavour.
I like Gala apples or Red Delicious best for this recipe because they hold up to the heat well and don’t get mushy quickly. Granny Smith’s are also a good option but a little more tart.
I also use this recipe during stone fruit season. The same recipe is great substituting peaches, plums or nectarines.
They just don’t take as long as the apples to cook, so add them at the end and heat until they are just softened a little but not mushy.
With peaches or nectarines, I sometimes use mango juice instead of the apple juice. That flavour combination is an absolute winner!

Glazed Apple French Toast
Apple Glazed french Toast - the perfect weekend brunch at any time of the year but particularly during the Fall apple harvest.
Ingredients
For the French Toast
- 8 slices of day old french bread, diagonally sliced baguette as pictured also works well.
- 4 eggs
- 1/3 cup whipping cream or milk
- pinch salt
- 1 teaspoon of vanilla extract
For the Glazed Apples
- 3 tbsp butter
- 4 tbsp demerara sugar, or brown sugar
- 1 cup apple juice
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 2 to 3 apples peeled, cored and thickly sliced
Instructions
- Whisk together the eggs, cream, salt and vanilla. Let the bread soak in this mixture for a few minutes to absorb as much as possible. Fry in butter over medium-low high heat until golden brown. You don't want to fry these too quickly.
To prepare the Glazed Apples
- In a large non-stick saute pan heat together the butter and demerara sugar for a minute or two over medium high heat.
- Add the apple juice, cinnamon and vanilla extract.
- Simmer for about 10-15 minutes until the volume reduces by at least half before adding
- the apple slices.
- Simmer until the apples soften but are not mushy and until the glazes reduces and becomes thick and sticky. Serve over the French toast.

I sure am going to try this out. Great idea to add vanilla and cream to the eggs :) More flavorful .Thanks for this recipe. I will try making it this weekend for brunch :)
