Orange Creamsicle Chiffon Squares

Here’s a recipe that I’ve been promising the folks over on our FACEBOOK PAGE, for a while now. 

It’s been so incredibly bust around here planning for the Christmas baking season that I’m behind on everything. I always think I can do more in an allotted time than I can.

I’m only one man! LOL!

In any Case this is the tird in our Chiffon Squares Collection. We also have the original Strawberry Version and a tangy  Lime Version!  A Raspberry version has been photographed, so that’s coming soon too.

Lime Chiffon Squares.

I loved the orange citrus flavour in these anc combined with the whipped cream in the mix really dooes remind me of an Orange Creamsicle Ice Cream treat. 

Try them and see if you agree. I wonder what flavour I’ll make next?

Orange Creamsicle Chiffon Squares

TIP!!   be sure to very finely chop the zest of the orange. This releases the natural orange oil in the skin and andds more intense flavour!

Finely minced orange zest.

Orange zest is an optional ingredient if you'd rather the classic version of this cookie.

Orange Creamsicle Chiffon Squares

Orange Creamsicle Chiffon Squares.  A new twist on a favourite no bake cookie square that can even be served  as a frozen dessert. Super easy too!

Ingredients

For the base

  • ¾ cup melted butter
  • 4 tbsp white sugar
  • 3 cups graham cracker crumbs

For the Orange Chiffon top layer

  • 2 small packages orange jello
  • The zest  of 2 large oranges, very finely chopped.
  • The juice of two large oranges topped to 3/4 cup if necessary
  • ¼ cup lemon juice
  • ¾ cup boiling water
  • 2 small cans mandarin oranges ( or 1 1/2 cups fresh supremed oranges or clenentines)
  • 1 can sweetened condensed milk
  • 1 bag mini marshmallows, 8 ounces or 250 grams
  • 16 ounces whipping cream, beaten to stiff peaks ( Some folks use Cool Whip instead)

Instructions

For the graham crumb base

  1. Mix together the butter, sugar and graham cracker crumbs.
  2. Lightly grease and line a 9x13 inch baking pan with parchment paper.
  3. Press the crumb mixture evenly into the prepared pan..

For the top layer

  1. Drain the oranges if using canned, discarding the liquid.
  2. Chop the sections at least in half and drain them on paper towels to use at the end. They should be added with as little liquid as possible.
  3. Combine boiling water, and jello, stir until dissolved.
  4. Add sweetened milk, orange and lemon juice and orange zest
  5. Fold in marshmallows and whipped cream. Finally gently fold in the oranges.
  6. Pour evenly onto prepared base and chill until the jello has completely set.
  7. These can also be served frozen; in fact many people prefer them frozen and that's almost always how I serve them. They defrost pretty quickly, so I always store these in the freezer anyway. thor
