These Strawberry Vanilla Whoopie Pies are great recipe to try with the kids this weekend. Making Whoopie Pies is one of my kids favorite baking activities and they make several varieties all on their own nowadays. These pink filled whoopie pies make a terrific addition to a class Valentines Day party as well.

Servings: 12 large whoopee pies or 18 smaller whoopie pies
Ingredients
For the Vanilla Cake Cookies
- 3 eggs
- 2 cups sugar
- 1 cup shortening
- 1 & 1/4 cups soured milk
- 2 tsp. baking soda
- 4 c. flour
- 3 tsp. baking powder
- 1 tsp. vanilla
For vanilla filling (with strawberry option)
- 6 tablespoons marshmallow fluff
- 4 tbsp vanilla extract
- 4 tablespoons flour
- 4 tablespoons milk
- 4 cups icing sugar
- 1 1/2 cups vegetable shortening
Instructions

To prepare the Cake Cookies

Cream sugar, shortening well and add the eggs one at a time, beating well after each addition.

Add vanilla.

Sift together flour and baking powder and add to the creamed mixture alternately with the milk, bginning and ending with the dry ingredients.

Drop by spoonfulls on lightly greased or parchment lined cookie sheets. about 2-3 inches apart.

Bake at 350 degrees for about 15 minutes or until cookies spring back when touched with the finger. Let cool before filling.
To prepare the vanilla whoopee pie filling

Add all ingredients in a bowl and beat until smooth. If the filling seems too thick, add a little more milk, if it seems too loose a mixture beat in a little more icing sugar.

Place a scoop of filling between two of the shells and enjoy!

NOTE: Here's my trick for turning the vanilla filling to strawberry filling.

Fresh or frozen strawberries will make the icing too runny (but you can replace the milk with strawberry puree if you like and add more icing sugar if necessary.)

My solution is to use 1 cup FREEZE DRIED STRAWBERIES that I find at the bulk store. I put them in the the food processor and pulse them through the icing sugar. Reduce the vanilla extract to 1 tablespoon and prepare frosting as directed. Nobody can figure out how the icing has such a strong natural strawberry flavour but that’s my trick.
