A tasty and healthy soup is a good thing on a day when fall is definitely in the air. This is particularly true in the days following Thanksgiving.
We all become just a little obsessed with the question of what to do with all those turkey leftovers. At our house, that is rarely an issue.

Making turkey stock is never an option.
We always make turkey stock from the bones and leftover meat from a roast turkey dinner. And I mean ALWAYS!
The standard joke at our house when someone asks what’s the secret to your turkey gravy is to reply, “we are always a turkey ahead!”
It’s not really a joke at all, because once you become accustomed to this turkey stock making routine, you will never go back. Having pre-made stock to fortify the flavour of your gravy is a game changer.
That’s even more so the more you reduce the stock to intensify the flavour. That reduced stock really is the secret to the best gravy and to the best soups too.
I use the same oven method for making turkey stock as I do for chicken or beef stock.
We freeze our fat free finished stock in half litre plastic containers for later use in soups, stews and sauces. And of course, for the absolute best gravy when added to the pan drippings of the next roast turkey.
An amazing nutritious turkey soup.
This soup makes good use of some of that stock along with some of the leftover turkey too. It’s a great way to stretch a recent roast turkey dinner into another economical meal.
This soup has a nicely flavoured, slightly spicy, stock scented with herbs and a little ginger.
The quinoa is an excellent addition to this flavourful soup. It brings extra protein to the soup along with a host of nutrients, extra fibre and essential minerals.
It’s a true nutritional wonder but you can always us Barley instead if quinoa if it is not available in your area.

Turkey Quinoa Sweet Potato Soup
Turkey Quinoa Sweet Potato Soup. A quick, healthy, delicious and nutritious soup that makes the best of leftover turkey or chicken.
Ingredients
- 1 large chopped onion
- 4 cloves minced garlic
- 4 tbsp olive oil
- 8 cups turkey stock
- 2 tbsp fresh grated ginger
- 2 tsp white pepper
- 1 tsp kosher salt
- 2 tablespoons chili powder
- 2 tsp paprika, (or smoked paprika)
- 2 tbsp fresh chopped or 1 tbsp dry thyme
- 2 tbsp dry summer savoury (or 1 tsp dry sage)
- 1/2 cup quinoa (or barley)
- 2 lbs of diced leftover turkey
- 2 sweet potatoes peeled and diced
- 1 red pepper, diced
Instructions
- To a large soup pot heat the olive oil over medium low heat.
- Cook over medium low heat until the onions have softened.
- Next add the turkey stock, grated ginger, pepper, salt chili powder, paprika, thyme, savoury, diced sweet potato and quinoa.
- Simmer for about 20 minutes.
- Add the leftover cooked turkey and red peppers. Cook only enough to reheat the turkey and be sure that the sweet potato pieces are fork tender.
- Buttermilk biscuits, fresh from the oven are very nice to serve with this delicious soup.
