Honey Lemon Vinaigrette on Peach Bacon Salad – a vinaigrette recipe that goes particularly well with salads containing summer fruits and berries like peaches and plums or strawberries & raspberries.
This Honey Lemon Vinaigrette recipe is barely a recipe at all but comes that the request of a friend who saws it used on a peach and bacon salad Spouse made last week. With fresh peaches and an abundance of garden cucumbers available at this time of summer, it’s a simple combination for a salad that works deliciously well with salty smoky bacon.
Honey Lemon vinaigrette is not meant to be used on a single salad however; we use it on practically and fresh salad that uses summer fruits and berries as they come into season. I love thyme with peaches but other fresh herbs could be substituted to suit the ingredients you are using. Fresh mint with a strawberry spinach salad is particularly good or try a little tarragon in the vinaigrette when fresh plums are in season to add to your fresh seasonal salad.
My only tip for salads like these is to keep it simple and limit the number of ingredients in them so that the best of what’s in season shines through.

- 3 tbsp freshly squeezed lemon juice
- 1/2 tsp finely minced lemon zest
- 2 tbsp extra virgin olive oil
- pinch salt and pepper to season
- 1 tsp honey
- 1 teaspoon chopped fresh thyme or other fresh herbs
- Romaine lettuce
- diced cucumber
- slices fresh peach
- crisp cooked smoked bacon chopped
Whisk together all of the ingredients for the vinaigrette or shake together well in a covered mason jar.
Pour over the assembled salad ingredients, toss and serve immediately.
