Through weeks of rain, drizzle and fog I still hold out hope that our barbecue season will start soon.  I need to see an end to what is shaping up to be the wettest June in St. John’s since 1982.

That’s according to CBC weather-caster Ryan Snodden, anyway. I’m sure weather forecasters are not in the business of making our weather sound even worse than it is.

When that barbecue ready day comes, this simple orange and fennel salad/slaw should be on your menu. It is great beside your favorite grilled chops or chicken.

Heck I’d even serve it with burgers. You can omit the chili paste if you prefer a bright, fresh side dish with out the spice.

I think fennel is a much underused vegetable. I love its delicate flavour.

This is really a sort of upscale coleslaw and since I just love fennel, It is a welcome addition to my plate anytime.

Consider a mandolin for thin slicing fennel.

Try this side dish with seasonal citrus too, like clementines or tangerines.

The secret here is to get your fennel as thinly sliced as possible. This is best accomplished on a mandolin.

If you don’t have one, a good sharp knife and a little patience will do just fine. However, you may just want to go and buy one if you take a particular liking to this tasty side dish.

Spicy Orange Fennel Salad - a deliciously refreshing new take on coleslaw using thinly sliced fennel, a little spicy heat and sweet orange slices. A wonderful balance of flavours.

Ingredients

  • 1 small head of fennel, thinly sliced
  • zest and juice of one small orange
  • 4 tbsp fat-free or reduced fat mayonnaise
  • pinch salt and pepper
  • 1/2 tsp crushed chili paste, (optional) more or less to taste
  • 2 large oranges, peeled and sliced

Instructions

  1. Toss together all ingredients except the orange slices.
  2. Cover and chill for an hour before serving with orange slices on top.
  3. Garnish with fennel fronds if desired.
