Strawberry Black Forest Cake. A delicious twist on a traditional Black Forest Cake using a strawberry compote and a favourite rum from Newfoundland.

This is a celebration cake that I came up with many years ago as an alternative the the traditional cherry and chocolate version and has been one that I have made may times since.

It is a much requested dessert when we have dinner guests at our house, having become a long time favorite of many of our friends.

I usually use frozen berries for the compote and fresh strawberries to garnish.

The chocolate cake soaked in dark rum seems to add a delicious element to this cake that people really love.

I like to use 50% dark chocolate chips for this recipe but you can use semisweet as well.

UPDATE:

I have since added a Double Chocolate Black Forest Cake to the website in answer to those looking for a good version with cherries but this one remains incredibly popular with Rock Recipes readers.

Strawberry Screech Black Forest Cake

Strawberry Screech Black Forest Cake - a delicious twist on a traditional Black Forest Cake using a strawberry compote and a favorite rum from Newfoundland.

Ingredients

For the Chocolate Cake

  • 2 cups sugar
  • 2 cups all purpose flour
  • ¾ cup cocoa
  • 2 teaspoon . baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup soured milk, (just add a table spoon of lemon juice or vinegar to the milk)
  • 1 cup cold black coffee
  • ½ cup vegetable oil
  • 2 teaspoon vanilla extract

For the Strawberry Filling

  • 4 cups fresh or frozen strawberries
  • ¾ cup sugar
  • 2 tablespoon corn starch dissolved in ¼ cup cold water

For the Vanilla Whipped Cream

  • 4 cups whipping cream
  • 6 rounded tablespoon icing sugar, (ie powdered sugar, confectioners sugar)
  • 2 teaspoon vanilla extract

Additionally you will need

  • 4 to 6 ounces Newfoundland Screech, (or other good quality dark rum.)

Instructions

To prepare the Chocolate Cake

  1. Combine all ingredients in a mixing bowl and beat with electric mixer for 2 minutes.
  2. Pour into 2 greased and floured 9 inch cake pans. Bake at 350 degrees F for 35-40 minutes or until toothpick inserted in the center comes out clean.
  3. Cool completely. Split cake into 4 layers.

To prepare the Strawberry Filling

  1. Combine the strawberries and sugar in a saucepan and bring to a gentle boil.
  2. Thicken with 2 tablespoon corn starch dissolved in ¼ cup cold water, which is added to the strawberries while stirring gently.
  3. Boil gently for 1 additional minute, stirring constantly. Divide in 2 portions and cool completely.

To prepare theVanilla Whipped Cream

  1. Combine all ingredients and whip until stiff mounds form.
  2. To construct the cake
  3. Split individual layers of cake into two layers making four layers in total. Sprinkle each layer of cake with about an ounce of Screech.
  4. Spread a layer of vanilla whipped cream on the first cake layer, followed alternately with a layer of cake, a layer of strawberry filling, cake,then cream again finishing with the final layer of cake.
  5. Frost sides of cake with vanilla whipped cream and using a piping bag pipe a border of whipped cream around the top of the cake.
  6. Fill the middle of the border on top with the remaining strawberry filling.
  7. Decorate the cake as desired with chocolate ganache dipped strawberries and drizzle of chocolate ganache.

Chocolate Ganache

  1. 1 cup chocolate chips
  2. ¼ cup whipping cream
  3. Heat whipping cream to scalding but do not boil. Stir in chocolate chips and stir over low heat until smooth. 
  4. You can dip strawberries in this glaze to garnish your cake as well as drizzling it over the cake for the final presentation. I use a piping bag with a number 3 writing tip to drizzle the ganache over the cake but a zip-loc bag with the corner snipped off works just as well.

  1. Black Forest cake is one of my favourites. I request it every year on my birthday, but bever had I seen a recipe as delicious as this one looks. I'll definetly have to give this one a try.

    1. Buttermilk. Or you can do it yourself. 1 cup of milk and one tbsp of vinager or lemon. Leave for 15 min.

  2. Just add a tablespoon or two of lemon juice or plain vinegar to your milk to curdle it and make sour milk.

  3. Hi candice, Screech is a traditional brand of dark rum sold in Newfoundland. You can of course, substitute another brand of rum.

  4. I'm going to be making this cake at the request of a friend. Coffee flavored anything is not good. Can the cup of coffee be left out and not change the taste or do we need the cup of liquid for the cake to come out right? Also, how much rum flavor will this have?     1. Just add a table spoon of lemon juice or vinegar to the milk. I've edited the recipe to make this more clear.

  5. In German this cake is called: Schwarzwalderkirsch torte... (and has usually chocolateflakes on the outside too)

  6. Since they are being cooked. I'll say whichever is cheaper. I generally use frozen for jams though.

  7. Schwarzwalderkirsch torte traditionally uses cherries and kirsch. This one looks yummy but I think I will use strawberry liqueur instead of rum.

  8. Can I make it without rum or is there any possible substitute for rum? Want to make a halal version of this cake for my husband?
