Vanilla Mango Jam, a very simple but elegant little jam that's perfect with scones and cream for teatime or as the filling for a special cake.

Originally published April 2017I first came up with this idea for Vanilla Mango Jam a few years back when I was planning a birthday cake for Spouse.
She absolutely loves gingerbread cake but isn't a big fan of fully frosted cakes. What I came up with was a One Bowl Gingerbread Cake with a simple vanilla glaze.

Then I wondered about maybe creating a filling for the cake. It ended up being this very jam.
At the time we had some mangoes on hand. I had also just picked up some vanilla beans during some shopping for baking ingredients.

The fragrant vanilla and exotic mango flavours were so delectable together! Ever since that we've since made small batches of this jam of weekend brunches.
It is just fantastic with clotted cream on these delicate little scones, making it perfect for teatime as well.

If using frozen diced mango, what would be the suggested quantity. I have a couple bags I would like to use up.

3-4 cups diced. Adjust the sugar to our taste if you like.
Given that mangos vary if size, can you tell me how much mango pulp 3 mangos produced? This looks delicious and since I love all things mango, I want to make this. I will be using Afluto mangos. Thank you.
I'd guess about 3 cups. Mine were quite large. You can adjust the sugar to taste if you like.

How long does it stay fresh in the fridge
Oh a couple of weeks or more at least. Sugar is generally a good preservative.
Can you freeze this jam? If so how long will last in freezer?
A couple of months at least.
Do you know if this recipe can be preserved through water bath canning?
It should.
