Bacon Potato Salad with Sweet Mustard Dressing. This satisfying bacon potato salad has a a sweet and tangy mustard dressing. It borrows the best from a combination of a few favourite potato salad recipes.

This bacon potato salad recipe with sweet mustard dressing was inspired by a couple of different potato salads. I combined them into one and then borrowed the dressing from a third recipe. It's a sweet mustard sauce that we often served with cold cuts and potato salad as a kid.
It makes a great take-along item to potluck dinners. It also makes a great addition to summer picnics, cookouts or barbecues. As one reader noted, "You can't have too many potato salad recipes!"

What jarred salad dressing did you use - I'm in South Africa and I really want to make this but I'm not sure about the salad dressing? french, greek, italian?? or mayonaise??

Miracle Whip, not Mayo.

I love this. I think you have created a great recipe which gathers all good elements. It almost has all my favorite ingredients in it. I am just thinking to substitute the vinegar with lime juice or lemon juice and the sugar with honey. I love honey in salad. 🙂
is there an alternative if I do not want to use miracle whip or mayo?
Try low fat yogurt. I make some dressings with that.
I made exactly as recipe stated. So good. Reminded me of dressing my mom used to make many years ago but hers had to be cooked. This one is so much easier and delicious. Had a little dressing left over and smeared a wee bit on a hamburger the next day and it was yummy too. Best potato salad I've had in a very long time.
While it may be true that you can never have enough potato salad recipes this recipe is really the only one you need. Simply fantastic. I ran out of potatoes so I boiled up some elbow macaroni to use up the left over dressing. Wow, both salads turned out excellent. I'm thinking this would also make some pretty kick butt deviled egg filling mixed in with the yolks.

I made this a few months ago as written except I left out the red pepper and added a small amount of pimento for a little bit of color. It was delicious and I now make it quite often. Thanks Barry.
Heinz Salad Cream would be perfect in this recipe. You can find in most grocery stores in same aisle mayo, miracle whip and salad dressings.
I would have thought the taste would benefit if dressing was added to warm potatoes?? That is done sometimes—but not recommended in this recipe?
