Here’s a great, easy-to-make cookie bar recipe with the delicious flavor of Almond Roca candy.

Caramely, nutty and chocolatey, what more could you want in a great cookie bar?

My secret weapon for cookie bars is a 14 inch blade ham slicer knife. My favorite tool for slicing prime rib too.

Almond Roca Cookie Bars. A very quick and easy to prepare cookie bar that takes only minutes. Reminiscent of the famous candy's flavour.

Ingredients

• 1 1/2 cups graham wafer crumbs
• 4 tbsp sugar
• 1/3 cup melted butter
• 1 cup brown sugar
• 1 cup melted butter
• 1/2 cup roughly chopped toasted almonds
• 2 cups chocolate chips.

Instructions

1. Mix together the graham crumbs, 3 tbsp sugar and butter.
2. Press into the bottom of a lightly greased and parchment paper lined 9x9 inch baking pan. Bake for 5 minutes at 325 degrees F.
3. Boil the 1 cup of butter with the brown sugar for 3 -4 minutes (no longer).
4. Quickly mix in the nuts.
5. Pour over the graham crumb base.
6. Immediately, while still hot, sprinkle on the chocolate chips. See note
7. Let stand for 5 minutes  to let the chips melt thoroughly.
8. Then quickly spread the melted chocolate chips over the surface of the cookie bars.
9. Allow to cool completely before cutting into squares or bars.

Notes

Sometimes I like to add half a cup of the chocolate chips to the graham crust before adding the boiled mixture for chocolate in the center as well.

If your chocolate chips on top do not melt enough to spread properly, stick the pan back into the still warm oven for 5 minutes and try again.
