Orzo is a great choice for pasta salad. If you don't have it or if it's hard to find at your local market, you can easily substitute any small size pasta you like. Macaroni or rigatoni will even do in a pinch.

I think the fragrant curry flavour along with the sweetness of the raisins id a delicious combination. Plus, the little crunchy bites from the carrots and red pepper all go together very well in this delicious summer side dish.

Looks and sounds yummy! Would it change the taste significantly if I used Miracle Whip instead of mayo?
I think it would. This recipe intentionally left out any vinegar element.
Huge difference in taste. Mayo isn't salad dressing.
Is that 3 cups of orzo cooked or 3 cups cooked orzo? Looks like a lot of dressing for 3 cups of cooked orzo.
Could this dressing be used in a small diced potato salad in case a guest could not eat wheat? I think a curried potato salad might be interesting for a picnic item or a barbeque outing. What do you think? I really enjoy your recipes. They are down to earth and uses normal pantry items.
