Better Than Miracle Whip. Not really a copycat recipe, but a lower fat mayo based salad dressing, that's great for potato & pasta salads. Extra additions can make it quite versatile too!

Miracle whip was a household staple when I was growing up and still is really. We used it far more than mayonnaise when I was growing up.

It's all about what you're used to, I suppose,  but i remember thinking mayo was quite bland in comparison when I first tasted it many years ago. Miracle whip was far more commonly used as a sandwich spread and in potato salads when I was a kid.

What you'll need for Better Than Miracle Whip Salad Dressing.

For the most part, I dare say it still is in most parts of the province. Certainly, millions of bottles have gone into the making of a Newfoundland Cold Plate over the decades!

For many, it is a common denominator in favourites like Beet Salad, Mustard Salad, and even the base for coleslaw as well.

Simply whisk all ingredients together until smooth and well combined.

Those who have followed me for a long time in Rock Recipes know that I love potato salad and pasta salads in particular. I just find them incredibly useful when feeding a big crowd as I often do with a large extended family still close by.

Followers will also know that I love to experiment with them as well. In addition to those traditional favourites mentioned above, there are quite a number if my own inventions and a few if Spouses that have appeared here over the last almost 20 years now.

20 Pasta Salads & Potato Salads

Pre-planning summer entertaining.

Summer in particular is a great time to serve these sorts if side dishes. I find them great take along dishes to picnics and cookouts and almost always at family get togethers.

Just this past week, we had a pre-Father's Day lunch at our house for over a dozen people, to celebrate early because my nephew Loey and his young family were visiting from Alberta.

I sparked up the smoker, and set out to get the meats ready for the big meal. Smoked Sausage, Pork Ribs and Chicken were on the menu, all of which took considerable time to be slow smoked.

The day before, Spouse and I set about making a couple of pasta and potato salads, plus desserts, to serve with the meat feast. That's the great thing about a BBQ meal in summer, because you can mix hot and cold dishes in the same meal.

Some Warm Brown Sugar Cornbread, which takes only minutes to get in the oven accompanied the hot side of the plate. The salads provided the sides.

It's this kind of preplanning that makes summer entertaining much more manageable and stress free. Never leave everything until the last day.

Better than Miracle Whip, I'm really not knocking the original.

This time around we wanted to include a couple if new ideas and one of them was a new potato salad recipe that I had in mind.

I have been curing and smoking my own bacon for the last few weeks. So, I wanted to include some if it it in a new idea for a simple Bacon & Egg Potato Salad, to serve for the first time.

I wanted something with plenty of zing to cut through the richness of the crispy bacon and hard boiled eggs. Miracle whip could have been easily used but I decided to experiment with siething a little different.

The apple cider vinegar and lemon juice aded plenty if bright fresh flavour to the dressing and the dijon mustard gave it more depth of flavour.

The chopped sweet pickles, which are optional worked very well the last time I made it as well. All the ingredients played very nicely together and after an overnight in the fridge were even better the next day.

Some additions to make Better Than Miracle Whip even more versatile.

It’s a very versatile dressing base for additions as well. Add lemon zest, chopped capers, roasted garlic, or even a little anchovy paste If that's your thing.

Play with your own flavours to suit whatever you are making. Great as a spread for sandwiches too, of course or in potato or pasta salad.

If you can, make this dressing a few hours ahead or even the day before. The flavours meld and get better with time.

Better Than Miracle Whip

Yield: 2 cups aprox

Total Time: 10 minutes

Better Than Miracle Whip. Not really a copycat recipe but a lower fat mayo based salad dressing that's great for potato & pasta salads. Extra additions can make it quite versatile too!

Ingredients

  • 1 ½ cups plain or low fat mayo
  • 1 ½ tablespoon apple cider vinegar
  • 1 ½ tablespoon lemon juice
  • 3 tablespoon icing sugar (powdered sugar)
  • 1 teaspoon mustard powder
  • 2 tablespoon dijon mustard.  (Yellow mustard is ok in a pinch)
  • ¼ to ½ teaspoon garlic powder 
  • ½ teaspoon sweet paprika (Or smoked paprika)
  • ½ teaspoon salt
  • ¼ teaspoon white pepper (or finely ground black pepper)

Instructions

  1. Whisk all of the ingredients together until well blended.
  2. Taste the dressing and adjust seasoning to taste. 
  3. At this point, adjust any of the ingredients to your personal choice or purpose.
  4. Add more garlic, more pepper, more mustard if it suits the salad you are making. 

Notes

It’s a very versatile dressing base for additions as well. 

We’ve added lemon zest, chopped capers, roasted garlic, or even a little anchovy paste on occasion. 

Play with your own flavours to suit whatever you are making.

Great as a spread for sandwiches too, of course or in potato or pasta salad.

If you can, make this dressing a few hours ahead or even the day before. The flavours meld and get better with time.

Keep refrigerated for up to 2 weeks.
