Fudge Sandwich Cookies – a.k.a. Homemade Fudgee-O Cookies.

While many kids were into Oreos, my favourite store-bought cookies as a child were Fudgee-os. When I was experimenting with a chocolate glaze a little while back, it came out more like fudge than a glaze, which made my mind do a quick turn.

I like to use 50% cocoa, dark chocolate chips in this recipe but you can use semi-sweet too.
I wasn’t disappointed because that happy little accident prompted me to try it as a filling for these dark, rich chocolate fudge sandwich cookies.

Use the best quality cocoa powder you can find for this recipe.
The experiment was a rousing success. I must confess, I like these much better than the many, many store bought Fudgee-Os I ate as a kid.
Maybe it was time for grown-up Fudgee-Os.

Looks like a great recipe, Barry, but the quoted times are out to lunch! 😬 Unless you're using a commercial oven, there's no way you're baking 48 cookies in 12 minutes. And the total time doesn't take into account the time chilling in the fridge. It's quite deceptive, if you're looking for a fairly quick recipe, as I was. Going to have to be for another day, unfortunately. I luuuuv Fudgee-O cookies!

Replaced egg whites with 4 tbsp of (coconut) milk, split 60/40 brown sugar/white sugar. Whipped butter and sugar till fluffy (approx 2 mins) and made smaller slices, about 1/8 thick., Reduced cooking time by 2 mins.. Imo I had better results

Fudgee-O's are SOOOO much better than Oreos! I'm going to make these today. I saw them on Pinterest earlier this morning, and my pregnant brain hasn't been able to stop thinking about them since! Haha I'll definitely be dunking them in cold milk too, so I'll let you know how they hold up. :)
