Soft Chewy Raisin Spice Cookies. The best raisin spice cookie I've ever had. Soft and chewy with crispy edges, these delicious cookies will fill your house with spicy scent as they bake. I hear they are one of Santa's very favourites too. 😉

Raisin spice cookies are always high on my favourites list at the Holidays. Just the scent of these baking is sure to evoke Christmas memories.
These should not be designated only as a Holiday recipe though. They deserve to be enjoyed year round in any number if different ways.
This is a great basic recipe with plenty of fragrant spice in a crispy, chewy cookie, just asking for different variations!
Don't like raisins? Try another dried fruit like chopped apricots, dates, dried cherries or cranberries...or add some favourite nuts! These are terrific as plain spice cookies too!
Because I love the combination of chocolate and spice, I've added chocolate chips to them in the past too.
It's a great basic recipe to play with and create your personal favourite version.
Christmas year round.
That got me thinking about some favourite local recipes that are mostly enjoyed at the Holidays. Tim e to put that notion aside and start baking them year round.
Cookies are perfect for summer picnics, spring parties and fall celebrations.

I just took these bad boys from my oven,....Delish!!! I doubled the recipe and used equal amounts of raisins and dried cranberries! They are a hit in this house ! Thanks for all the wonderful recipes!!!

They smell and taste amazing , but I think I forgot the soda . They are hard little balls ! Oh well..gonna try it again .To be continued. ....
That would do it.
I boil my raisins to plump them up before adding to the mixure. That is how I learned to make them!
