Cherry Almond Clafoutis. A french classic dessert that beautifully incorporates sweet cherries, almonds and a creamy baked custard.
Our recipe today comes courtesy of Martha, a Rock Recipes reader who kindly sent it to me. This was after I read her hubby raving about it on Facebook.
Judging by her own cooking and canning related status updates on Facebook, she can find her way around a kitchen pretty darn well. And I don’t think she minds a little culinary experimentation herself.
I think she could probably give that other Martha a run for her money. 😉
Clafoutis is a classic French dessert, best served slightly warm. It reminds me of a baked flan but with fruit suspended in the custard. It is one delicious comfort food dessert.
I have made a couple of adjustments to her recipe to suit my own taste. I’ve replaced half the milk in the recipe with cream to improve the texture of the custard like center.
Then, I substituted the vanilla paste in the original recipe for some easier-to-find good vanilla extract.
Also, I like to toast the almonds a little before adding them to the recipe to bump up their flavour. With good cherries from Chile now on the market shelves, this dessert makes a great winter warm up treat.
I wouldn’t hesitate to use thawed frozen cherries in this cherry almond clafoutis recipe either. First, drain off any juice that appears after they thaw, as this may interfere with the setting of the custard.

Martha's Cherry Almond Clafoutis
Cherry Almond Clafoutis. A french classic dessert that beautifully incorporates sweet cherries, almonds and a creamy baked custard.
Ingredients
- 3 tsp vanilla extract
- 2 cups fresh cherries, pitted whole cherries or cut in pieces
- 1/4 cup toasted slivered almonds
- 3 large eggs
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 3/4 cup all-purpose flour
- 1/2 cup milk
- 1/2 cup whipping cream
- 1/2 tsp almond extract
- 1 tsp vanilla extract
- 2 Tbsp brown sugar
- 2 Tbsp flour
- 1 Tbsp butter, softened
Instructions
To toast the almonds, sprinkle them evenly over a cookie sheet and bake in a 350 oven for 5-7 minutes or until just a little golden brown. Allow to cool for 15-20 minutes.
Preheat oven to 350 degrees F. Grease a large 10 inch pie plate well.
Prepare fruit and chop them in bite size pieces, or leave whole, your choice. Mix with almonds and sprinkle on the bottom of the prepared baking dish.
In a medium size mixing bowl, with a hand whisk, whip eggs and sugars together until light and frothy. Blend in flour.
Add milk, vanilla and almond extract, and mix well.
Pour gently over the cherries and almonds, being careful not to disturb fruit, and bake for 30 minutes.
While the clafoutis is baking, mix together the 2 tbsp brown sugar, 2 tbsp flour and 1 tbsp butter to make a streusel.
Remove clafoutis from oven and sprinkle streusel on top.
Return to oven and bake for an additional 15-20 minutes or until knife comes out clean and clafoutis is light brown and slightly puffed. It will fall slightly during cooling time but this is normal.
Cool on a wire rack for 30 minutes. Dust with powdered sugar and serve warm with fresh whipped cream.
