Easy Blue Cheese Sauce. A simple to prepare creamy, delicious blue cheese sauce to serve with grilled steak or roast beef or use it as a dip!

Easy Blue Cheese Sauce

Here's a very simple recipe for a versatile and easy blue cheese sauce that can be used on steaks or as a dip for vegetables or crusty bread. It is also very good tossed with pasta as a side dish to serve with steak or roast beef. I actually toss this sauce with cooked penne and thinly sliced rare steak for one of my favorite pasta dishes. It's saturated fat heaven, I know, but it is so delicious.

I don't cook this for long because I like the blue cheese to stay a little chunky while still flavouring the sauce.

Easy Blue Cheese Sauce - A simple to prepare creamy, delicious blue cheese sauce to serve with grilled steak or roast beef.

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoon chopped shallots
  • 1 oz white wine
  • ½ cup sour cream
  • pinch salt
  • ¼ teaspoon fresh cracked black pepper
  • 2 ounces crumbled blue cheese, at room temperature.

Instructions

  1. To a small saucepan add the olive oil and shallots.

  2. Sauté the shallots in the olive oil until softened and fully cooked.

  3. Add the white wine and simmer until the wine is half reduced in volume, then add

  4. the sour cream, salt and pepper

  5. Bring to a slow simmer before adding the blue cheese.

  6. Stir in the blue cheese, cover the pot and remove it from the heat. Let stand for 5 minutes before giving it a final stir and serving.
