It’s back to work and school after the holiday season. At our house that also means a return to a reliance on quick and easy dinner ideas.
This simple throw together recipe for Garlic Chicken Puttanesca is a kid favourite at our house. Plus, it can be on the table in about 20-30 minutes.

I love Kalamata Olives in this recipe but if you don’t they are completely optional.
It’s also a pretty versatile, simple and forgiving recipe. Not everyone os a fan of capers or anchovies, so both of these ingredients can be left out if you prefer.
The same goes for the chili flakes. Leave them out entirely or add more or less to suit your tolerance for spicy heat.

If serving this as a quick weekday dinner for guests, we like to serve it with one of our favourite and most flavourful salads ever, Radicchio Almond Caesar Salad.
We’ve served our Garlic Chicken Puttanesca on some cheese tortellini in the photos here. You can simply substitute your own favourite plain pasta for a bit of a lighter meal.
Buy some fresh pasta in the supermarket deli aisle to make it just that little bit more special if serving it for dinner guests.

TIP:
I like to debone my own chicken breasts so that I can roast the bones and skins for stock later. I freeze them until I have enough to cover a baking sheet then use the instructions in my post on making Chicken Stock here.

I made this recipe for my family for dinner tonight. I omitted the anchovy paste and the chili flakes and only used 1 1/2 tbsp of capers. Everyone really enjoyed it! It was delicious! Thank you for the recipe! We will make it again.

Great simple recipe. It must have been full of great flavor and see why it is a favorite. To me the 3 optional ingredients would be a must (specially the capers).
