Grilled Chicken Spaghetti Margherita. A great pasta dinner with classic Italian flavours that makes use of a BBQ grill during the summer months or just pan sear the chicken to enjoy this meal at any time of year.

Grilled Chicken Spaghetti Margherita.

We are longing for the weather improves here in Newfoundland. This has been a very snowy winter and I can only but dream of being able to use my backyard grill.

As we continue the long wait to transition into the grilling season here’s a quick, easy dinner idea.

This simple meal combines chicken from the grill (or skillet) with pasta and a fast cooking simple tomato sauce.  Add to that some melting fresh mozzarella and chopped fresh basil and you have a delicious chicken dinner the whole family would love.

Vine ripened tomatoes are great for this recipe but you can use the same amount of canned tomatoes out of season.

Heck, I’d even serve this to dinner guests. Who wouldn’t love a chicken dinner crossed with a great simple pasta?

These simple classic Italian flavours are delicious with smokey, juicy chicken fresh off the grill for a very satisfying workday meal.

NOTE: I like to debone my own chicken breasts so that I can roast the bones and skins for stock later. I freeze them until I have enough to cover a baking sheet then use the instructions in my post on making Chicken Stock here.

Grilled Chicken Spaghetti Margherita

Grilled Chicken Spaghetti Margherita - a great pasta dinner with classic Italian flavours that makes use of a BBQ grill during the summer months or just pan sear the chicken to enjoy this meal at any time of year.

Ingredients

  • 1.5 lb boneless skinless chicken breasts
  • 4 cloves minced garlic
  • 6 tbsp olive oil
  • 8 tomatoes
  • 2 tbsp brown sugar
  • 1/2 tsp crushed chili flakes
  • 1/2 tsp salt
  • 6 tbsp balsamic vinegar
  • 1/2 pound dry pasta
  • 1/2 pound fresh mozzarella

Instructions

  1. Season 4 large boneless skinless chicken breasts with salt and pepper and grill until fully cooked. You can marinate the breasts in a little olive oil and oregano beforehand if you like.Rest the chicken for 5 minutes before slicing and serving in this dish.
  2. Saute the garlic in the oil over medium heat for just a minute before adding the tomatoes, brown sugar, chili sauce, salt, pepper.
  3. Continue to cook until the tomatoes soften and the compote reduces to a thickened consistency. Add the balsamic vinegar in the final minute or two of cooking before serving.
  4. Cook 1/2 pound spaghetti in salted water and drain.
  5. To serve, add a sliced chicken breast on top of the spaghetti, then spoon on some of the tomato sauce. Top with slices of fresh mozzarella pop under the broiler for only a couple of minutes to melt the cheese.
  6. Finish with a generous sprinkle of chopped fresh basil and a little Parmesan cheese if you like.
