These Marshmallow Roll Cookies are another treat that you routinely see on trays of Christmas cookies here in Newfoundland. They are popular in local bakeries too, especially those that specialize in popular Newfoundland treats and squares.
They look very much like Newfoundland Snowballs but the soft chocolate outside is even easier to make. This is the same recipe that I use to surround well drained maraschino cherries as well.I sometimes dip those in chocolate or roll them in coconut like in this recipe.

You will also often see this recipe made as a long roll with slices cut off the roll to serve. My method is a little different because I found the roll more difficult to store.
The cut marshmallow kept sticking together in the containers and this often led to mangled slices.

The Solution.
My solution was to turn each large marshmallow into its own sphere and then freeze them. When serving, I then just slice halfway through the marshmallow and chocolate ball to create 2 individual portions.
Easy peasy and no sticky marshmallows to wreck the look of the cookies.
As a kid, I'd most often see these made with coloured/flavoured marshmallows but those seem to be increasingly hard to find. Kraft Canada, who make the popular Jet-Puffed brand I grew up with as a kid, do not list the jumbo size on their website. just the mini marshmallows.

You may be able to find them in another band if you try. The pretty pastel colours do look very appealing on the plate.
Nonetheless, these are still quite delicious with their chewy texture, chocolatey flavour and soft marshmallow centre. Because they are so freezer friendly, they are an ideal make-ahead idea for kids birthday parties or for Christmas treats.

Hi Barry! We're making these cookies now and I noticed there's a different amount of coconut in the ingredients list and in the directions. Wondering which one is correct! Can't wait to eat them!

Do these cookies freeze well (about a week)?
Oh yes, and longer than that.
I made those last night. Put them in the freezer over night. Just this morning I realize I did not roll them in the coconut. Can I thaw them and roll in the coconut?

These tasted amazing! My only problems were that the chocolate layer was too soft and they started to spread out before they froze so they are just brown lumps. And when I tried to slice them the marshmallows smashed down so they aren't round. They may be a fail to look at, but they were delicious!
Perhaps your measurements may have been a bit off. I'd have added some more crumbs to the mix.
It sounds like you put a little to much chocolate coating on them and did you freeze the balls before teying to cut them?
Does this mean cocoa POWDER? I know that seems dumb, probably.

Hi is there any way to do this recipe without coconut?
Maybe roll them in graham crumbs...replace the coconut with mare nuts in the mix?
Made them today and turned out great. Instead of making into ball in my hand I put blob of chocolate mixture in between 2 pieces of waxed paper then flattened with my hand then removed top waxed paper placed marshmallow in middle then peeled mixture off paper and wrapped around marshmallow and rolled in ball. Little easier and less messy. 😀
I also did it using your wax paper method & it worked very well. Like Barry says in his instructions I also had a bowl of water to keep fingers wet.
They turned out great.
I made these today. They turned out great.
Very easy and not messy at all. I used latex gloves and they didn't stick at all. I was able to mould the chocolate mixture around the marshmallow without any difficulty.
