Quick BBQ Chicken Tortilla Pizza – a super quick, super easy meal idea that kids will love.
Today’s quick and easy recipe is actually inspired by my ids, both of whom have turned into pretty proficient cooks in the kitchen themselves. We’ve always encouraged them to take part in preparing meals or baking their favourite treats. It’s a lifelong skill that every kid should be encouraged to learn the most they can about. It also fosters a love of food and a better understanding of nutrition.
As they grew into pre-teens and then teenagers, the ravenous appetites of young adults came with the always and inevitable, repetitive “I’m hungry”! From a young age my kids were encouraged to solve that problem for themselves and to be a little inventive in the solution.
When Maple Leaf Foods asked me to come up with a quick and easy recipe idea using their new Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken, it was this idea that came to mind. They’ve used this idea many, many times for after school fuel ups, quick lunches and late night snacks. Paired with a side salad it makes a terrific dinner for the busiest workdays too.
Make this recipe idea fun in the kitchen with smaller kids by using smaller 6 inch tortillas, letting them choose their own toppings, and adding them themselves. When kids are involved in preparing their own meals, you’ll have far fewer complaints at the table, I guarantee.
We generally use part skim mozzarella for pizza, and keep whole wheat tortillas on hand too. Using those, along with fresh peppers or other veggies makes this a pretty nutritious snack or meal too. I can see lots of versatile ideas for this shredded chicken too; because it is so simply seasoned you can add any flavours you like. - 4 large whole wheat tortillas
- 1 tablespoon canola oil
- 1/2 cup BBQ Sauce
- 1 package Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken
- 8 ounces part skim Mozzarella cheese
Preheat oven to 400 degrees F
Lightly brush the canola oil onto the tortillas and lay them, oiled side down onto baking sheets.
Spread about 2 tablespoons of the sauce over each tortilla.
Top with the chicken, cheese and veggies.
Bake for 13- 15 minutes until the cheese is melted and the bottom is crispy.
You can use tomato sauce instead of BBQ sauce if you prefer. Many times we mix both for a great balance of flavour.
