This Raisin Almond Cornbread stuffing is a great comfort food side dish for chicken or pork. Use it as a stuffing or bake in a covered casserole dish for about 30 minutes.

Ingredients

  • 3 tbsp extra virgin olive oil
  • 3 cloves chopped garlic
  • 1 small red onion finely diced
  • 3 cups cornbread cut in small cubes and toasted
  • 3 cups French bread cut in small cubes and toasted
  • 1 tsp ground sage
  • 1 tsp ground thyme
  • ½ tsp ground black pepper
  • ½ cup toasted slivered almonds
  • ¾ cup golden raisins
  • ¼ cup melted butter
  • 1 cup chicken stock

Instructions

  1. Toast bread cubes on a cookie sheet in a 350 degree F oven for about 10-15 minutes. Toss a couple of times during the baking tome to ensure even browning.

  2. Sauté garlic and onions in olive oil to soften them and add to remaining ingredients. Toss together well and use as a stuffing for chicken or a loin roast of pork.

  3. You can also cook this stuffing in a covered casserole at 300 degrees F for about ½ hour.
