Tomato Olive Salad. A delightfully simple and delicious side dish idea or serve it on a bed of lettuce with a sprinkle of feta cheese for a satisfying lunch.

Tomato Olive Salad. Healthy and delicious.
We use this as a side dish, warm and cold. As a lunch, we enjoy it with some good toasted French bread and a piece of good cheese.
Sometimes, we serve it as an appetizer course at a dinner party. On those occasions, we serve it on a bed of baby spinach with a sprinkle of feta cheese over the top.

Vine ripened tomatoes are great for this recipe but you can use the same amount of canned tomatoes out of season.
You can also serve it that was as a tasty and healthy lunch idea.
To serve this Tomato Olive Salad as a hot side dish, simple take a couple of tablespoons of the olive oil and add them to a sauté pan. Saute the onions over medium heat until they soften a little.

Then add the olives and tomatoes to the pan and sauté for another couple of minutes just to warm them through. Remove form heat and toss with all of the remaining ingredients and serve.

One caution when seasoning this salad is not to go overboard with the salt. Since the olives are quite salty, this will need little or no additional salt added.
This Tomato Olive Salad is very simple, but very good.

Kalamata Olives are my favourite in this recipe.

The picture seems to show black olives; recipe does not state. Of course, black olives would be delicious.
