Orange Creamsicle Pie. A very easy to make pie with a no churn ice-cream-like filling on a cookie crumb crust. A perfect, refreshing, summer barbecue dessert, or an ideal make ahead pie for Thanksgiving.

Ever need to make a dessert ahead of time? This pie is an ideal recipe for that purpose.
It is creamy smooth straight out of the freezer with plenty of orange citrus flavour punch. It reminds me of one of my favourite ice cream treats as a child.

A great idea would be to make two of these at a time. One to enjoy now and one to have on hand as a last minute dessert rescue for unexpected dinner guests.

My wife started making this and realized there are uncooked eggs in the filling. I'm not worried about it but she's paranoid about salmonella. Comments?
Beating the sugar and egg yolks together denatures the egg making it safe. This is better explained here: http://wiki.answers.com/Q/Does_sugar_cook_an_egg
Of course the fact that this is a frozen pie and is served at a temperature where no bacteria could ever grow anyway makes it even more safe. There really is nothing to worry about here.

It is yummy and yes it does get served frozen. That's the great thing about it, the velvety ice cream texture.
