Creamy Lemon Parmesan Salad Dressing. A delicious Italian inspired dressing for fresh salads, pasta or potato salad or as an addition to a great sandwich.

We do love our fresh salads around here, and summer offers up some of the best produce to enjoy them fully. One thing that makes them more enjoyable is a great homemade dressing.

The same old, same old bottled dressings can get very monotonous, for sure. We have made many if our own over the years from simple Vinaigrettes to our own twists on creamy ranch or caesar dressings.

The inspiration for Creamy Lemon Parmesan Salad Dressing.

Oddly enough the inspiration for this dressing came from some fresh Spring asparagus!

Once again we were entertaining a big family gathering, and wanted to come up with a new pasta salad side dish for the meal. Folks sort of expect at least one new thing on the table when invited these days.

Sweet Spring asparagus is one vegetable Spouse and I never differ on. We both love it.

In summer especially, we love it simply tossed in lemon juice, lemon zest and a little olive oil. Then a quick couple of minutes in a hot grill and they are simply perfect!

Some beautiful asparagus was available that week, so we decided to incorporate it into a very uncomplicated pasta salad. Some hothouse grown cherry tomatoes were also available, and we decided to use just those two perfect ingredients in the salad.

But what dressing to use? Why not invent a new one? Something with the freshness of lemon but with a creamy cheesy element as well.

This is what we came up with and it was absolutely delicious! Everyone enjoyed our unfussy pasta salad.

A versatile dressing indeed.

With some if the leftover dressing it went onto our dinner salad the next day, where it was equally enjoyed. I dare say the flavour was even better after being left overnight.

Finally I fancied a version of an Italian sub the next day and the last of it was used as a spread for the baguette roll. Again, it was a delicious addition to a very satisfying and hearty sandwich.

Creamy Lemon Parmesan Salad Dressing. A delicious Italian inspired dressing for fresh salads, pasta salad or a tasty addition to sandwiches.

Ingredients

  • 1 ½ cups plain or low fat mayo
  • 3 tablespoon lemon juice
  • Zest of one lemon, very finely minced
  • 3 tablespoon icing sugar (powdered sugar)
  • 1 teaspoon mustard powder
  • 1 teaspoon dijon mustard. (Yellow mustard is ok in a pinch)
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon white pepper (or finely ground black pepper)
  • ¾ cup finely grated parmesan cheese

Instructions

    1. Whisk all of the ingredients together.
    2. Taste the dressing for a final seasoning if needed.
    3. If you can, make this dressing a few hours ahead or even the day before. The flavours meld and get better with time.
    4. Great as a spread for sandwiches too, or in potato or pasta salad.
    5. Keep refrigerated for up to 2 weeks.
