This recipe has been around for a while on Rock Recipes as a condiment for our Super Crispy Fish and Chips recipe. I've always loved the balance of zesty citrus and salty caper flavours in it.

It's far less boring than standard tartar sauces with just pickle relish. As a matter of fact, I recently sampled some standard tartar sauce when we ordered take out fish and chips a couple of weeks ago.

Finely minced lime zest & chopped capers bring the flavour!

What I was struck by most, was the sugar level in the commercial versions. The sweetness was the first thing I noticed.

I don't think particularly sweet sauces go with seafood. I prefer a more savoury, zesty sauce with plenty of citrus zing!

Lime Caper Tartar sauce, not just for Fish and Chips.

I was again reminded of this tartar sauce after the recent success of our Homemade Sandwich Spread. We've actually been making it ever since.

Spouse had fallen in love with it and uses it on everything from a plain tomato sandwich to a turkey club these days.

Homemade sandwich spread will easily keep for 2 weeks in a mason jar.

The reminder came when I was making some crispy fried fish sandwiches recently. We had been gifted some fresh cod from the current recreational fishery, ongoing during the summer months here in Newfoundland.

I normally serve fish burgers with plain mayo but decided to amp up the flavour this time! Like that Sandwich Spread, this tartar sauce seemed to improve everything we served it with.

The delicate flavour if the thick fresh cod fillets was not lost to an overwhelming condiment, yet the flavour of the citrus and capers lingered on the palate for a delicious finish.

Be sure to try it as a dip for beer battered shrimp or create a new shrimp cocktail version with it. Use it there as sort of a substitute for Marie Rose sauce which still seems to be a popular choice for prawn cocktails in the UK.

As always, let us know what you thought of this recipe in the comments if you try it. I think you'll agree it's a step up from boring , standard tartar sauce.

Ingredients

  • 1 cup mayonnaise (See Notes)
  • 2 teaspoon capers, chopped
  • 2 teaspoon sweet pickle relish
  • 1 teaspoon honey
  • 1 teaspoon Worcestershire sauce
  • juice of ½ lime
  • 1 teaspoon lime zest, chopped finely
  • pinch black pepper

Instructions

  1. Simply mix all of the ingredients well until completely combined.
  2. Let sit in the fridge for a couple of hours before serving. (See Notes)

Notes

  • I usually use reduced fat mayo in sauces and dressings like this.
  • As with most sauces and dressings lie this, if you can make it a day ahead, it's even better! The lime flavour from the zest, infuses beautifly and mellows the flavours after a night in the fridge.
  • Leftover tartar sauce can be kept for at least a week in the fridge in an airtight container.
  • Try it as a sandwich spread for ham sandwiches too!
