Lime Caper Tartar Sauce
Lime Caper Tartar Sauce. A new twist on a seafood sauce classic. A delicious balance of boosted flavours to compliment everything from Fish and Chips to Seafood Sandwiches!

This recipe has been around for a while on Rock Recipes as a condiment for our Super Crispy Fish and Chips recipe. I've always loved the balance of zesty citrus and salty caper flavours in it.

It's far less boring than standard tartar sauces with just pickle relish. As a matter of fact, I recently sampled some standard tartar sauce when we ordered take out fish and chips a couple of weeks ago.


What I was struck by most, was the sugar level in the commercial versions. The sweetness was the first thing I noticed.
I don't think particularly sweet sauces go with seafood. I prefer a more savoury, zesty sauce with plenty of citrus zing!

Lime Caper Tartar sauce, not just for Fish and Chips.
I was again reminded of this tartar sauce after the recent success of our Homemade Sandwich Spread. We've actually been making it ever since.
Spouse had fallen in love with it and uses it on everything from a plain tomato sandwich to a turkey club these days.

The reminder came when I was making some crispy fried fish sandwiches recently. We had been gifted some fresh cod from the current recreational fishery, ongoing during the summer months here in Newfoundland.
I normally serve fish burgers with plain mayo but decided to amp up the flavour this time! Like that Sandwich Spread, this tartar sauce seemed to improve everything we served it with.

The delicate flavour if the thick fresh cod fillets was not lost to an overwhelming condiment, yet the flavour of the citrus and capers lingered on the palate for a delicious finish.
Be sure to try it as a dip for beer battered shrimp or create a new shrimp cocktail version with it. Use it there as sort of a substitute for Marie Rose sauce which still seems to be a popular choice for prawn cocktails in the UK.
