Seafood Lasagna with Roasted Fennel Tomato Sauce. A deconstructed version that can be easily plated just before serving for a very impressive presentation. The subtle flavour of the roasted fennel tomato sauce pairs perfectly with the succulent seafood.

I’ve tried quite a few seafood lasagnas in restaurants over the years but it is difficult to find one where the seafood is not overcooked because of the cooking method. Some others have had quite heavy sauces with far too much garlic or herbs which overpower the delicate taste of the seafood.
When adding herbs, I usually do it at the last minute so as not to over-saturate the flavour of the sauce. Truthfully, the mellow anise-like flavour of the roasted fennel is enough in this sauce and you can leave out the herbs if you like.
In this recipe the sweet, rich flavor and perfectly cooked texture of the seafood is what is important. Get all the individual elements right and this is simply the perfect seafood lasagna, ideal for special occasions or whenever you want to impress.

The Roasted Fennel Tomato Sauce is to die for. I ended up spooning the leftover sauce from the pot directly into my mouth. This is just a great tasting red sauce for any number of dishes - meatballs, pasta, chicken/pork pizzaiola, etc.
The lasagna recipe is quite good to - though I had to swap out the lobster for scallops (I live in Denmark and a lobster here costs roughly the equivalent of a mid-size automobile). I also added a layer of fresh ricotta cheese beneath the top layer of lasagna noodles for a bit of savory richness.
Put aside your rules of not mixing fish and cheese (I usually agree with you). This recipe works.

Woah...this is nothing like my grams use to make. I remember telling my friends about this and thought it was so gross but it was really good, she used to make a Salmon Lasanga, it came out really yummy! I can't remember for the life of me how to make that work if i had to. But this looks really good!

Looks delicious! I’ve been on a big recipe “kick” lately, as I have been trying to expand my diet beyond the same old. Doesn’t look to hard to make either, so thanks for that.
