Roasted Strawberry Jam. Making strawberry jam in the oven may sound a bit strange but the intensely delicious result will quickly make you a convert to this unusual method. Just as delicious made with frozen strawberries too.

Making jam in the oven may sound a bit strange but the result will quickly make you a convert to this unusual method. The natural and added sugars slowly caramelize in the oven as the strawberries reduce and concentrate their delicious flavour.

This is the most intensely flavoured strawberry jam you will ever sample with a complimentary hint of caramel too. This particular jam was made from some half priced, very ripe strawberries in the produce clearance shelf at my local supermarket.

Fresh strawberries are great when in season. I use frozen berries most of the time to make it a little more economical.

This jam idea is ideally suited to summer strawberry season when plenty of ripe berries are available too. It's great for when you need to use up those quickly ripening berries in the fridge or when they are on sale at the local market.

However, I make this jam all year round using frozen strawberries. Just this week, during a freezer clean out, I discovered a large unopened bag of them from Costco.

A few hours in the afternoon was all it took to turn those frozen strawberries into an economical, intensely flavoured jam.

This phenomenal jam gives your morning toast an instant upgrade but deserves to be centre stage in lots of delicious desserts too. It is amazing in a simple whipped cream "fool", a delicious filling for turnovers or an outstanding topping for cheesecake.

Any dessert in which you would use strawberry preserves or jam will be made even better by adding this intensely flavourful jam instead.

With strawberry season around once again this summer, I've been working away at even more strawberry recipes. But I cannot let the season go by without making this incredible jam.

Today, with a fresh batch made and a single sheet of frozen puff pastry needing to be put to good use, I threw together these delightful little pastries as an afternoon treat for Spouse and I. Oh my, they were so delectably buttery and flakey!

The intense strawberry jam married perfectly with the buttery pastry. Give them a try fro Sunday brunch or for when a friend drops over for an afternoon cuppa.

Ingredients

  • 2 pounds very ripe strawberries, washed and quartered
  • 1 cup white sugar
  • 2 teaspoon vanilla extract

Instructions

  1. Toss the strawberries, sugar and vanilla together in a glass baking dish.
  2. Roast in the oven at 350 degrees F stirring occasionally until the jam reduces and the juice almost completely boils off.
  3. Watch it closely toward the end of the cooking time because the sugars will be very concentrated and will more easily burn.

Notes

Cooking time will vary depending upon the water content of the strawberries and the depth of the baking dish. Allow up to 90 minutes for the jam to cook fully.

  1. This sounds so yummy! Can't wait to try it when the good strawberries are in. I love roasted veggies...why have I never thought about roasting fruit?

    1. WOW.............this was the BEST Strawberry Jam I ever had!! Mine was 90 minutes.....but next time I will make a lot more! Can this be Frozen? I went to the Fruit Stand that has Strawberries picked right there! They have ripe Strawberries they sell 3 pints for $5...........I got these..............amazing!!! They use NO PESTICIDES and NO GMO!! The Strawberries are so sweet and juicy!! I will be going back tomorrow for more!!!!

  3. Storage depends on how you want to prepare it for storage. It should be fine for even a couple of weeks in an airtight container in the fridge but if your properly bottle it in mason jars using the prescribed method, it will, of course, keep for months at least.

  4. This looks so delicious and easy. I wonder if the same technigue would work with tomatoes. My grandma used to make tomato preserves that I really miss. I LOVE your recipes and photos.

    Do you peel the tomatoes before roasting?

    1. Yes, I've made peach and apricot jam this way too. It would probably work for most fruits. The time may be shorter for fruits with less water content.

    1. I have not tried it. I might try it with stevia as an experiment but I wouldn’t ever use an artificial chemical sweetener.

    Can this jam be put into jars? If it can, do you have to process the jars like regular canning? Can you freeze this jam in freezer containers? If so, how long can you freeze this jam.

    1. Hi Caroline, Yes you can bottle/can it using the proper safe canning process. I have never frozen it, I'm afraid.

  7. Hi, just to confirm, you toss the strawberries with the sugar and vanilla in a dish, put it in the oven at 350 and roast it, then bottle it? Sounds too simple - must try! Also, do you know how many cups equals to 2 lbs.? Also, can you do it in bigger batches? Thanks

    1. It is very simple. You can make larger batches if you like and bottle it in the normal method. I buy the strawberries by the pound. Next time I'll get a cup measurement.

  8. I just made this, this afternoon. It took me 3 hrs to cook it! Lol I'm not complaining, just saying. But wowy!! Intense to say the least! Love it

    1. Yeah, it heavily depends on the water and sugar content of the berries. But you're right, well worth the effort.
