Smoky Summer Barbecue Chicken Spice. A balanced blend of herb and spice flavours to compliment grilled, roasted or even smoked chicken.

I have been working on a couple of new BBQ seasonings lately, as I gear up for the summer BBQ, grilling and smoking season. In truth my new smoker has been in use for a month or more now.
I just love anything smoked, from sausages and prk loin to chicken, ribs and brisket! In fact I smoked my first brisket in my new smoker just yesterday!

In Newfoundland, even if it doesn't warm up until later, once the snow melts and I can get to my equipment, I'll cook in a parka if I have to.
To me, winter isn't over until I can taste something charred on the grill or deeply smoked. It is a real harbinger if Spring for me.
Smoky Summer Barbecue Chicken Spice, branching out.
Everyone knows I love my versatile everyday dry rub and BBQ seasoning mix. I developed Smokin' Summer Spice BBQ Rub many years ago, and no lie, there has never been a day that it has not been in my kitchen since.

It really does go with everything. I should know, I've used it on everything!
This year I wanted to branch out to more specific seasonings for different proteins. I started with chicken because I had friends over for the first meal from the smoker of the season and I wanted something new.

Specific flavours.
I wanted a more poultry centric flavours, like in stuffing, mixed with traditional BBQ spices. I also wanted to maintain the smoky flavour of smoked paprika in the mix, so that it could be used on oven roasted or pan seared chicken as well. It may be my favourite spice of all time.
The result was this new Smoky Summer Barbecue Chicken Spice. I've already used it on some roasted chicken thighs, & on some grilled chicken breast for sandwiches. Delicious.

In the photos for this post, I featured it on some spatchcocked whole chicken, with a generous amount sperinked on. It was quickly cooked in the smoker for around an hour or so, until an internal temperature in the thighs and breasts reached 170 degrees F.
As always, I rest the chicken for 15 minutes before carving. The result was succulent and juicy. Perfectly cooked.
My guests loved it and went home with leftovers too. Give it a try and give your BBQ chicken a flavour boost this summer too!
