When pickling season begins at the end of summer, that always means a trip to the bulk store. There, I get fresh herbs, seeds and spices specifically for my Pickling Spice Blend.

It's always the bulk store, because they have fresh turnover of these things on a regular basis. Also, If I need something in a small quantity, like whole cloves, I don't need to overbuy a whole packet or spice jar full.

Some of those herbs and spices, you may only need at that time of year as well. It's just better to buy fresh in small quantities as needed, every year.

Homemade Pickling Spice Mix. Why bother?

Yes, I know some of you are thinking, "Those pre mixed packets are pretty inexpensive anyway. Why bother?" Well, again, freshness and flavour are central to my reasoning.

We don't know how long those packets have been in the shelf. They may even be last years stock, as pickling activity mostly happens late summer and early fall, during harvest season.

So, in my opinion why take the chance? With today's rising grocery costs, the cost of pickling ingredients is also on the rise. 

Don't waste time or flavour in a sub-par final product. Go for freshness and flavour.

Homemade Pickling Spice Mix

Homemade Pickling Spice Mix. Well, home blended for freshness at least! Freshly bought dried herbs and spices are best for guaranteed great flavour.

Ingredients

  • 6 tablespoon whole mustard seeds (yellow or brown)
  • 4 tablespoon whole coriander seeds
  • 4 tablespoon whole black peppercorns
  • 4 tablespoon dill seeds
  • 2 tablespoon whole allspice berries
  • 1 tablespoon whole cloves 
  • 3 bay leaves roughly crushed
  • 2 cinnamon sticks (I use a kitchen mallet to break them in small pieces)
  • 1 teaspoon red pepper flakes (optional to taste, if making spicy pickles)

Instructions

    1. Mix all of the ingredients together until well combined. 
    2. Use the amount called for in the recipe tied in a muslin bag. Or stack several layers of cheesecloth tied into a little parcel. It’s what the French call a Sachet d'épices. (Spice bag).
    3. The bag gets tossed in with the vegetables and brine for about 15 minutes or the total cooking time or as is indicated in the recipe being used.
    4. Discard the bag when finished cooking the pickles.

Notes

Makes about 1 ½ cups ( for relishes, chow chows etc)

This is roughty the equivalent of two, 100 gram packets of pickling spice from the supermarkey spice aisle.
